Ingredients 1 quart dried apple 3 lbs ham 2 tablespoons brown sugar
Dumplings 2 cups flour 1 teaspoon salt 4 teaspoons baking powder 1/4 teaspoon pepper 1 egg, well beaten 3 tablespoons butter, melted 2/3 cup milk (amount is approximate)
Directions 1 Wash apples; cover with water and let soak at least 8 hours or overnight. 2 Cover ham with cold water and simmer for 3 hours. 3 Add apples and their water; continue to boil another hour. 4 Add brown sugar. 5 Add dumplings to the pot the last 18 minutes before service. 6 To make dumplings: Sift dry ingredients together. 7 Add egg, melted butter and enough milk to make a stiff batter. 8 Drop by teaspoons into boiling liquid. 9 Cover tightly and cook for 18 minutes. 10Serve piping hot on a large platter.
1 cleaned pig stomach 4 c. diced potatoes 1/2 c. fresh sausage (loose) Salt & pepper to taste 1 tsp. ground coriander 3 tbsp. flour
Put the diced potatoes in a large bowl. Crumble the loose sausage through the potatoes. Add the rest of the spices and flour; toss to coat the potatoes. Stuff this mixture into the pig stomach. Using a poultry nail, close the hole. Put the stuffed stomach in a roaster. Add 1 cup water in the bottom of the pan. Roast at 375 degrees for 2 hours. Check a couple of times to see if it needs more water. Slice to serve. Variation: Do not add coriander or flour.
I was just wondering what dishes are popular where you live. I live in PA Dutch country. We eat PA Dutch chicken potpie... NOT in a shell. It's made in a big pot, with potatoes, homemade bows, chicken, & carrots... sometimes.
We also make ham, green beans & potatoes in a pot. Kind of like a soup/stew. It's DELICIOUS!!
