Home-Style Chicken Biryani

Biryani is a very popular dish in India and many Middle-Eastern countries, but its preparation is elaborate and involves precise timing, whether you follow the North Indian Awadhi style or the South Indian Hyderabadi style. What is offered here is an approach to cooking biryani that you can use at home without the need for a traditional tandoor (oven) or a slow-burning coal fire. With this home-style chicken biryani recipe, you can enjoy flavorsome, aromatic biryani without sweating it too much.

Home Style Chicken Biryani Recipe

Ingredients

12 medium-sized chicken pieces, preferably with meat on the bone
3 medium onions, finely chopped
2 green chillies, finely chopped
1 tablespoon garlic paste
1 teaspoon ginger paste
2 tablespoons finely chopped coriander leaves
1 tablespoon finely chopped mint
1 level tablespoon finely ground coriander powder
1 teaspoon cumin seeds
1 teaspoon poppy seeds
1 cup of beaten yogurt
1 level teaspoon garam masala powder*
1 bayleaf
10 peppercorns
6 cloves
6 green cardamoms
1 black cardamom
1 inch cinnamon stick
1 flake of mace
300 grams of long-grain (pulao) rice
Half a teaspoon of powdered turmeric
1 chopped tomato
Half a cup of packaged, pre-fried onions

Directions

Dry-grind a tablespoon of peppercorns, 5 cloves, 5 cardamoms, 1-inchcinnamon stick, 1 tablespoon coriander seeds, 1 teaspoon cumin seeds, 1 teaspoon fennel seeds, 2 dried red chillies, 1 bayleaf. Store the powdered garam masala in an airtight bottle.

To prepare the rice: Thoroughly wash the rice and put it into an electric rice cooker. Add the same quantity of water, 1 level tablespoon of salt, the bayleaf, 5
peppercorns, 3 cloves, the cinnamon stick, the mace, 3 cardamoms, the black
cardamom, the turmeric, and half a cup of beaten yogurt. Mix the contents
thoroughly and put it up to cook. The rice cooker will switch off automatically
when the rice is cooked.

To prepare the chicken: Heat four tablespoons of groundnut oil in a wok. Add the chopped onions, green chillies, cumin and poppy seeds, ground coriander, ginger and garlic
paste, 5 peppercorns, 3 cloves, 3 cardamoms, and keep stirring until the onions
turn golden brown.  Add the chicken pieces and stir-fry for about five
minutes. Then add the chopped coriander, the mint, the remaining yogurt, the
chopped tomato, the teaspoon of garam masala powder, salt to taste, and just
enough water to prevent the mix from sticking to the bottom of the wok.
Continue to stir-fry, adding a little water from time to time until the chicken
is cooked, but keeping the dish relatively 'dry'.

Empty the contents of the wok into the rice cooker, then add thepre-fried onions and mix well, making sure to separate the cooked rice if it
has caked.

Serve hot, accompanied by a green salad or roasted poppadoms.

Notes

There are many varieties of garam masala, each differing from the other in terms of ingredients and proportions used. Some garam masalas are more flavorsome, while others are pungent. The recipe given here is for garam masala that balances spiciness and taste and is suitable for most Indian dishes that require it

Pâté Chinois

Pâté Chinois is not a Chinese recipe. It may simply be an adaption of "Shepherd's Pie", but one possible explanation for the Chinese reference is that it was introduced to Canadian railway workers by Chinese cooks during the building of the North American railroads in the late 19th century.

Pt Chinois Recipe

Ingredients

INGREDIENTS

4 cups (1 litre) Russet or Yukon gold potatoes, peeled and cubed

1/4 cup (60 ml) butter, or more

1/2 cup (125 ml) milk, approximately

1 lb (454 g) lean or semi-lean ground beef

1 onion, finely chopped

1 can 19 oz (540 ml) creamed corn

Paprika, to taste

Dried parsley, to taste

Salt and pepper

Directions

PREPARATION

In a large pot of salted water, cook the potatoes until they are very tender. Drain.
With a masher, coarsely crush the potatoes with at least 30 ml (2 tablespoons) of butter. With an electric mixer, purée with the milk. Season with salt and pepper. Set aside.
With the rack in the middle position, preheat the oven to 190 °C (375 °F).
In a large skillet, brown the onion in the remaining butter. Add the meat and cook until golden brown. Season with salt and pepper. Remove from the heat.
Lightly press the meat at the bottom of a 20-cm (8-inch) square baking dish. Cover with the corn and the mashed potatoes. Sprinkle with paprika and parsley.
Bake for about 30 minutes. Finish cooking under the broiler. Let cool for 10 minutes.

Chicken Breasts,Broccoli Cheese Stuffed

I found this on the internet and haven't tried it as yet but I do intend on trying it.

Chicken Breasts Broccoli Cheese Stuffed Recipe

Ingredients

Ingredients

3 large chicken breasts
salt & pepper
1 1/2 tsp garlic powder, divided
1/4 tsp paprika
1 cup finely chopped broccoli florets
1/2 cup finely diced red bell pepper
1 cup mild cheddar cheese
1 tbsp mayo
2 tbsp olive oil

Directions

Instructions

Preheat oven to 425 degrees F.
Season both sides of the chicken breasts with salt, pepper, paprika and 1/2 tsp of the garlic powder. Use a sharp knife to cut a slice through the middle of the chicken breasts, but not all the way through, creating a pocket for the filling.
For the filling, place the broccoli in a microwaveable dish and add about 2 tablespoons of water. Cover with plastic wrap and microwave for 1 minute. Drain any excess water. To the dish add the bell pepper, cheese, mayo, remaining garlic powder and salt and pepper to taste. Mix until combined, then divide the mixture between the chicken breasts, using a toothpick to secure if necessary.
Heat a large, oven safe skillet (I prefer to use a cast iron skillet), over medium heat and add the olive oil. Sear the chicken for 3 to 4 minutes on each side. Cover skillet with foil and bake in preheated oven for 15- 17 minutes, or until chicken reads 165 degrees. Let rest, covered for 5 minutes before enjoying.

Notes

The creator of this recipe stated this blow.

Since these are large chicken breasts, I usually say 1/2 chicken breast is one serving.

No-Prep Quinoa Shrimp with Peas

If you need a quick meal for a weekday night, this Quinoa Shrimp with peas cooks up in about 15 minutes, and it's gluten-free and nutritious. Quinoa is a very filling, ancient grain from South America and is a complete protein, which means it contains all nine of the essential amino acids for good health. If you want, you can leave out the shrimp, and add a second cooked vegetable in its place. The heat from the quinoa will cook the peas almost immediately - no fuss or muss!

No Prep Quinoa Shrimp with Peas Recipe

Ingredients

½ cup quinoa
1 cup water
8 ounces cooked frozen shrimp
1 cup frozen peas
1 tablespoon coconut oil
Low-sodium soy sauce, to taste

Directions

Rinse quinoa under cold water, in a grain strainer or other fine-meshed strainer. Over medium-high heat, bring water to boil. Stir in quinoa and return to boil. Cover, reduce heat to medium-low, and cook about 12 minutes. Remove from heat when all water is absorbed. Add frozen peas immediately and stir so peas are covered completely.

While quinoa is cooking, melt coconut oil in skillet and add shrimp. Cook, stirring often, about 5 minutes until shrimp is defrosted and pink. Add shrimp and soy sauce to quinoa mixture and stir. Serve immediately. Refrigerate or freeze unused portion.

Garlic Pepper Lime Baked Chicken with Tofu and asparagus

i write my own recipes and i am choosing to go as healthy as possible and this one is my own creation and i really hope everyone enjoys it! I have made this dish at least 20 times for family and friends and they all really dig this one so here it is everyone!!

Ingredients

6 chicken breasts
3 cloves freshly minced garlic
1 tsp fresh mint
a splash of white wine
cracked black peppercorn
sea salt
asparagus
cayenne pepper
Parmesan cheese
mushrooms
1/3 stick of butter
couscous
parsley
fresh spinach
balsamic vinegar
cherry tomatoes
1 diced onion
mint jelly
coconut milk
cashews
honey
ginger
hickory smoked bacon
lemon
lime
tangerine
optional: tofu

Directions

take chicken breasts and place in baking dish.
combine the coconut milk, cayenne pepper, fresh mint, cracked black peppercorn, Parmesan cheese honey and balsamic vinegar together in a medium mixing bowl and whisk until blended well.
dice onion.
Mince the garlic.
fry the bacon until cooked crispy but not too crispy.
add in cherry tomatoes.
add mushrooms into the melted butter.
add the ginger lightly.
sprinkle sea salt generously to chicken.
begin to preheat oven to 400 degrees F
after the oven is preheated combine the mixture in the mixing bowl with the chicken and place the chicken in the oven until the meat is tender and no pink is showing. it usually takes 23-30 minutes to fully cook the chicken.
while the chicken is baking begin to cook the couscous and as the couscous is cooking begin to add the asparagus and white wine, add some of the now cooked and cooled bacon to the couscous and asparagus and white wine. add the mushrooms and butter.
add the rest of the garlic.
add the parsley.
and allow the couscous and mixture of ingredients to combine so the flavor is at full capacity.
after the chicken is done and fully cooked slice the lemon, the lime and the tangerine and squeeze the juice out of the three fruits onto the chicken and couscous dish.
spoon the mint jelly over the chicken.
begin to place the fresh spinach onto the desired size dishes that are being used to serve the meal.
take the chicken and place accordingly on the plate.
serve the couscous.
and be sure to add some more Parmesan cheese and also the cashews and enjoy!

Notes

it is best to always stick to the order of the instructions due to so much that is going into this particular dish. and remember timing is literally everything when preparing this dish.
and you can always add the tofu if desired but considering the fact that there is actual meat in this dish it is optional but it actually brings out more of the classy side of eating a really delicious healthy meal so i would definitely consider adding after making the dish a couple of times and make sure that you get the honest approval from those of whom you are preparing this dish for before adding the tofu because not everyone will want it so if there is a mixed opinion make it in a separate dish and anyone that does want to add it in can do so according to their desired experience.
