Falafel

Falafel (sometimes spelled falafal or felafel) is a type of Middle Eastern ball or patty-shaped fritter made from soaked and ground dried chickpeas (and sometimes fava beans), garlic, fresh herbs, and seasonings. They are traditionally deep-fried until crispy brown outside and tender in the middle.

Falafel Recipe

Ingredients

815 g chickpeas dried; or optionally 50/50 chickpeas and fava beans
140 g yellow onion 1 medium
20 g garlic 3 cloves
45 g cilantro 1.5 cups
45 g parsley flat-leaf, 1.5 cups
1 Tbsp falafel spice
1/2 tsp salt
1/2 tsp baking powder
1-1.5 l sunflower oil if frying – or other neutral cooking oil

Directions

You can do this step the night before!
Transfer the dried chickpeas to a large bowl and cover them with cold water. Leave them to soak for at least 8 hours or overnight (up to 24 hours). Then drain and rinse them well.
In a food processor, roughly chop the onion and garlic.
Add the chickpeas and pulse into a crumb consistency before adding the cilantro and parsley and pulse a few more times into a homogenous mix.
Be careful not to over-process it into a paste. There should be some texture.
Transfer the falafel dough back to the large bowl and combine with the falafel spice and salt, mixing with a spoon.
When you're ready to cook the falafel, add the baking powder and mix. Cover and chill the bowl in the refrigerator for 30 minutes (an hour if you have the time) before frying.
To form the falafel, you can use a specific falafel scoop or a spoon (and hand-shape them into balls or slightly flattened disks). Be gentle, so they stay fluffy.
I like to use about 1 ½-2 tablespoons of mixture per falafel, but you can adjust the size to preference, like making large falafel burger patties (and the cooking time, accordingly).
Once you've formed your falafel balls, proceed with the cooking method of your choice.

Deep Fried
In a large, heavy-based skillet, add 1 ½-2 inches of oil (you need enough to cover the falafels) and heat over high heat until it gently bubbles).
Heating the oil to 350°F/180°C is best. To test if the oil is hot enough without a thermometer, drop a small amount of the falafel dough. It should sizzle immediately and brown within a minute.
Carefully lower 5-6 balls/patties into the oil (cook in batches to avoid overcrowding the pan). Cook them for 3-4 minutes, flipping and continuing to cook until golden brown all over.
Use a slotted spoon to remove them from the oil onto a layer of paper towels to drain.

Notes

Pan Fried
Add enough oil to coat the bottom of a large, heavy-based skillet and heat over medium-high heat.
Once hot (the oil should shimmer), add the falafel patties (best if flattened, not balls) and cook them for about 2-3 minutes per side or until golden brown and crispy.
Use a slotted spoon to transfer them to a layer of paper towels to drain.

Oven Baked
Preheat the oven to 475ºF/240ºC.
Spread the falafel patties onto a greased or parchment paper-lined baking tray (best if they're flattened, not balls). You can also place them in small muffin tins. Generously brush or spray with oil.
Adding the oil is technically optional but will help to achieve the crispy outside.
Bake the falafels for between 15-20 minutes, flipping them halfway. When ready, they should be golden brown and crispy.

Air Fried
Preheat the air fryer to 400ºF/200ºC.
Spread the falafel patties into the air fryer basket, leaving space between them (cook in batches if necessary). Then brush or spray them with oil.
Air fry the falafels for 8-10 minutes or until brown and crispy. No need to flip halfway.
The cooking time will vary based on the size of the patties.

Storage Instructions
Fridge: Allow them to cool, then store leftovers in an airtight container in the refrigerator for 3-4 days.
Freeze: Flash freeze the patties until solid, then transfer them to a Ziplock for 3-4 months. You can reheat them from frozen or thaw them first.
Make ahead: You can store the falafel mixture in a covered container in the refrigerator for up to 3 days. Bring it to room temperature and add the baking powder before shaping and cooking them.

Ingredients

INGREDIENTS
1 pound tomatoes, diced
¾ pound cucumbers (1 European or 4 Persian), diced
1 green pepper, preferably a long green Italian frying pepper, seeded and diced
½ small red onion, sliced, soaked in cold water for 5 minutes, drained and rinsed
¼ cup (loosely packed) coarsely chopped flat-leaf parsley
1 tablespoon chopped dill
2 tablespoons chopped mint
1 teaspoon sumac
½ to 1 teaspoon Turkish or Aleppo pepper
Salt to taste
3 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
1 to 2 ounces feta, crumbled (1/4 to 1/2 cup) (optional)
Black olives as desired (optional)
Romaine lettuce leaves and pita bread for serving (optional)

Directions

PREPARATION
Combine all of the ingredients except the olives and romaine in a large bowl and refrigerate for 30 minutes. After 30 minutes toss together, taste and adjust seasonings. Garnish with olives and serve, with pita bread and romaine lettuce if desired.

Lahmacun-Turkish pizza

Lahmacun Turkish pizza Recipe

Ingredients

For the crust
5 cups of all-purpose flour
1.5 cup of milk (or water - the reason for me to use milk is for the bottom of the crust to get a nice golden colour)
1/4 cup vegetable oil
3 tsp salt
1 tsp sugar
1.5 small package of insant yeast (10 grams).

While the dough is rising, let's go on with the meat mixture. What we need:
1 pound ground beef
1 red paprika
1/2 green paprika
2 tomatoes (you can use tinned tomatoes)
1 large onion or 2 medium sized onions
1 tbs pepper/tomato salca (pure tomato salca will work fine if you can't find mixed salca)
2 tsp red paprika powder
1.5 tsp ground cumin
1.5 tsp ground black pepper
2 tsp salt (use the double if your salca is not salted)
A handfull of parsley
1/5 cup olive oil

Directions

1-Combine all the ingredients for the dough in a bowl or stand-mixer. Kneed or mix the dough for about 5 minutes and let it rise for two hours. Lahmacun crust is not like pizza crust where the crust almost defines the dish. We are also not achieving to get air bubbles or anything. The star of the lahmacun is the meat-mixture, not the dough. If you can manage to let the dough rise and roll a thin flat disk with your roller pin, then you've achieved your goal!
2-Put the the paprikas, tomatoes, parsley and onion in a food processor and mix untill everything is well ground.The consistency of the mixture should be in between a paste and sauce. Add this, together with the salca, olive oil and spices to the ground beef and mix with your hands untill everything is mixed thoroughly.
3-when your dough has risen, start with forming little balls out of it (or big, it all depends on how large you prefer your lahmacuns). Mine are a little bigger than a ping-poing ball. Cover the balls so they don't dry out.
4-Flour your work surface, take your roller pin and roll out your balls. You want your dough to be very thin, about two millimeters. Then, take a spoon and put about one tablespoon or more - like I said before, it all depends on how big you made the balls - of the meat mixture and spread it on your dough. You may want to use the back of your spoon to even it out.In an ideal world, we would own a brick oven in which we would bake these babies, but we don't, well...at least, I don't. I have a simple large pizza pan and a small 'grill' that I use for baking my lahmacuns - and to be honest, they turn out great every time! If you don't have a pizza pan or a flat grill, you can also use your oven. Pre-heat your oven untill 400 degrees and bake the lahmacuns for about 5-10 minutes. If you are using a pizza pan/grill, it will take less time. Your lahmacuns will be done in 3 minutes or less.
5-Squeeze a bit of lemon juice, put some salad on your lahmacun, wrap and enjoy

Goulash

You can find variations of this recipe in areas of Israel, Lebanon, Italy, and other places where Sefardi Jews have traveled. It has that Mediterranean flavor with the flare of middle eastern that will delight your palate.
This particular recipe has been passed down through the maternal generations of my family, and I carry it on! I hope you enjoy it!

Goulash Recipe

Ingredients

2 pounds of ground beef
1 onion, diced
8 cloves garlic, crushed and diced
1 large carrot, grated
2 stalks celery, diced
1 zucchini, grated

1 large can crushed tomato
1 large can diced, stewed tomato
6 leaves of basil, chopped
1 teaspoon fresh/dried minced rosemary
1/2 teaspoon ground coriander seed
1 to 1 1/2 teaspoons ground paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon white sugar

Directions

Cook ground beef, onion, garlic, carrot, celery, and zucchini in a deep skillet on medium-high heat, stirring frequently until meat is cooked (browned) and vegetables are tender.
Drain out all grease from the meat.

Pour in the other ingredients and stir well. Turn heat down to a low medium and simmer for 30 minutes.

Put a pot of water on to boil. When water is boiling, cook 1-2 packages of shell or penne pasta according to instructions on the package.

After straining the pasta, mix it into the meat mixture. Serve hot with a side of crusty bread and/or salad.

Microwave Macaroni

This is a Microwave Masala Macaroni recipe and is vegetarian friendly. I am not a vegetarian but this is delicious tasting.

Microwave Macaroni Recipe

Ingredients

Macaroni pasta 1/2 cup (You may take any kind of macaroni I took elbow macaroni)
Water 1 Cup
Salt as per taste
Cooking oil 2 tablespoon
Onion 1 medium (finely chopped)
Tomato 1 medium (chopped)
Carrot 1 medium (chopped)
Capsicum 1/4 cup (chopped)
Ginger garlic paste 1/2 teaspoon
Red chili powder 1/2 teaspoon
Garam Masala 1/2 teaspoon
Salt as per taste
Tomato sauce 1-2 tablespoon
Milk 1/4 cup

Directions

In a microwave safe bowl add macaroni along with water and salt and mix it.
Put the bowl in microwave for 7-8 minutes on high power. Stir for 2 times in between.
After the time you will see the macaroni is cooked well and water dried from it.
Now take another microwave safe bowl and add cooking oil in it.
Then add chopped onion, tomato, carrot, capsicum and give a mix to everything. Put the bowl in microwave and cook on high power for 4 minutes. After 4 minutes you will see all the vegetables are cooked well.
Add ginger garlic paste, red chili powder, garam Masala, salt, tomato sauce in the veggies. Give a good mix and put the bowl in microwave. Cook on high power for 3 minutes.
Take the bowl out of microwave and add milk in it, mix it as well.
Now add boiled macaroni in the veggies. Microwave on high for 1 more minute.

1 cup (130g) all-purpose flour
¾ cup (95g) cornmeal
2 teaspoons baking powder
½ teaspoon baking soda
¼ cup coconut sugar
¾ teaspoon salt
½ cup full fat sour cream
¼ milk plus ¼ half and half (or use all whole milk if you prefer)
2 large eggs
6 tablespoons unsalted butter, melted and room temperature
½ cup corn (can use frozen)

Instructions
Preheat the oven to 350 degrees F. Butter an-inch baking pan or dish and set aside. Whisk the eggs, then add in the sour cream, milk, half and half, and sugar until well combined. Add in the flour, cornmeal, baking powder, baking soda, sugar, corn and salt. Mix until just combined. Pour the batter into the prepared pan. Bake for about 30 minutes or until light golden brown and toothpick inserted in the center comes out clean.

Ispanak Spinach Recipe

Ingredients

1/2 kg.Spinach
1 big pc. onion
1 table spoon rice
3 table spoon oil , - sunflower,preferable olive oil-natural
1 tablespoon tomato paste
Salt , scale is - due to your taste
Red ground pepper or,spicy fresh green pepper - depends on your taste-
1 water glass water

Directions

Wash and clean out Spinach , min.10 minutes leave in water with vinegar for cleaning.

Drain Spinach.

Add oil in pan and heat it ,Cut onion in cubes -how you liked in food , roast till colors get pink and-or yellowish brown -in oiled pan.

Add tomato paste on onion.
Then add spinach and turn till gets soften and lighten in pan then add pepper , washed rice ,salt

Add 1 glass of hot water in pan.

Turn the heat low level and close the lid of pan ,wait till rice getting soften (Approximately , 30-40 minute )watch out --- don't burn my spinach ,ha ha ha...

Serve for 2-3 person ,if you like you can add yogurt on top .

You also can add , 1-2 clove garlic with onion and 1-2 carrot after onions get yellowish .This recipe is the based one , you can add harmonious vegetable with spinach - like cabbage, zucchini or cauliflower ,seperate or together -or ingredients what ever you like
