Simple Plain Curry Food

My Mom taught me this plain simple easy curry food. Hope you try it too :)

Ingredients

Meat or Chicken
2 potatoes or more if needed
2 onions
1 grated tomato (optional)
1 level tablespoon of white or brown sugar
2 bay leafs
3 cardomon pods
2 pieces of stick cinnamon
1 teaspoon roasted masala
1 teaspoon curry powder ( optional )

Directions

Braise onions and grated tomato together and add in a level tablespoon of sugar for the tomato. Add in bay leafs, cardomon pods, stick cinnamon, roasted masala, curry powder. Add in meat or chicken afterwards add in potatoes dont forget to add 2 or more cups of water to the cooking pot, so that it can cook for a 1/2 an hour to 1 hour. Serve it with white rice. Enjoy cooking :)

Notes

Depends on the size of your cooking pot it may be small, medium or large cooking pots. Its a South African dish.

True Love/ True Companionship

I made up this recipe for fun.

Ingredients

2 lonely people
dash of mutual attraction
5 cups Love
1 cup Respect
1 cup ReallyLike (organic is preferable)
1 tablespoon Hot sauce
500ml Patience
3 teaspoons humour
1 teaspoon romance

Directions

Mix the lonely people together with a dash of mutual attractiveness and knead for at least 25 mins
Fold in cups of Respect and ReallyLike
Knead again, add hot sauce and Patience
Knead a bit more
Finally, add the Love and make sure you knead it thoroughly throughout the mixture
Pour into heart-shape mold and bake in a preheated oven (350F) for an hour and a half.
Test for readiness (toothpick test)
sprinkle with humour and romance when ready

Notes

If hot sauce not available, add a touch of Black Pepper or Cayenne Pepper

Beef Pilau

This is one of my favorite fried rice recipe. Of course with beef in it. Very traditional kenyan Cuisine very common in the coastal part of kenya ??

Ingredients

Ingredients
?pilau masala...either store bought or freshly pilau masala
?lots of onions
?lots of garlic
?ginger
?oil
?salt
?beef
?beef broth
?rice make sure you have good quality

Directions

METHOD
-boil meat until tender alternatively you can use soft meat.. you dont have to boil especially goat or mutton..drain all the water and make sure the meat is perfectly browned keep aside...
-fry onions in oil until almost cooked add the garlic and ginger..make sure it doesnt burn.. add pilau masala..add salt let it cook for about a minute or so...add your beef let it cook for a few minutes...let it cook covered for a few minutes...then add your beef broth...
-meanwhile wash your rice and drain all the water.
-when the water boils add the rice...after the 1st boil turn the heat to.low.and cook the rice covered untill well cooked.
You can as well cook everything in the rice cooker..

Notes

This is a quick meal you can also make guacamole or tomato salsa or any salad of your choice to go with the meal. Alternatively you can substitute the meat with chicken if you love chicken more.??????

Ingredients

Ingredients
30 ml butter
250 ml sugar
2 eggs
30 ml vinegar
10 ml bicarbonate of soda
60 ml apricot jam
500 ml cake flour
250 ml milk
pinch of salt
SAUCE
500 ml milk
375 ml boiling water
375 ml sugar
60 ml butter
45 ml vanilla essence

Directions

1. Preheat the oven to 180° C. Grease an ovenproof dish with nonstick spray.

2. Cream the butter, sugar and eggs together.

3. Mix the vinegar and bicarbonate of soda and to the jam.

4. Sift the flour into a bowl. Add the creamed butter and jam mixtures and mix while pouring in the milk and salt to form a batter. Pour the batter into the prepared dish and bake for 55 minutes or until golden brown.

5. SAUCE Bring the ingredients to the boil in a small saucepan, stirring frequently.

6. Pour the sauce over the pudding as it comes out of the oven.

Serve hot with ice cream or custard.

Family recipe for turkey on the braai.

A braai is similar to what is called a barbeque and in South Africa, we love our braais.
I would like to share a recipe for a turkey braai. So you can enjoy a relaxing day in the outdoors yet still retain the turkey tradition.

Ingredients

To start off with, you will need a 5kg turkey that will serve up to 12 people, 400g of pork sausage meat, a pack of bacon, 1 tub of chicken livers, bread crumbs, 4 oranges or orange juice, butter, olive oil, cashew nuts, salt, pepper, lemon juice, 3 onions, parsley and thyme.

Directions

Fry the onions with the bacon and the bread crumbs in the olive oil, adding the chicken livers and turkey heart with two handfuls of cashew nuts and the pork sausage meat. This is the stuffing part. Once it has gained a light-brown colour, add in the pepper, salt, lemon juice, orange juice, and add two eggs to bind the mixture together. Take the mixture and stuff it into the turkey. Rub some olive oil, lemon juice and orange juice onto the turkey to add some flavour and colour. Now you’re ready to cover the turkey with foil and put it on the braai.

Let the turkey brown (the juice will change colour). Watch the pop-up thermostat to see if the bird is ready. Don’t let it get too dry. In about an hour and a half, you will be enjoying a lovely turkey braai with the family on Christmas Day.

Braai Sauce

My cousin taught me this recipe :) i not only used it for braai purposes but also just for frying chicken or steak in the pan normally.

Ingredients

2 tablespoons of tomato sauce
2 tablespoons of mayonnaise
2 tablespoons of chutney

Directions

Mix ingredients well together. Then add your meat or chicken, or patties to the sauce let it marinade for an 1 hour or 2 hours. Enjoy!

Notes

Depends on the amount you would to use for the marinade small, medium or large amounts.

okra and molokhia Recipe

Ingredients

1/4 k okra +2 cup meat soup
1/4 k molokhia+ 2 cup meat soup
three minced garlic
1 spoon of olive oil
pinch of salt
pinch of black pepper

Directions

1-You buy a quarter kilo of and quarter kilo molokhia ready-made and refrigerated from the supermarket
2-you put cut okra in the boiling soup 2 cup
3-you put cut molokhia in another boiling soup 2 cup.
4-After cooking for twelve minutes for each of them in a separate bowl, they are ready at the last step
5-In a separate saucepan, put a spoonful of olive oil, then the three mashed garlic cloves, and stir until golden, and do not leave too much on the fire, only two and a half minutes on low heat.
6 -Divide the contents of the bowl of garlic equally over the molokhia and okra, and season with salt and black pepper, according to the taste of each individual.

Notes

-this okra and molokhia, and its method are very simple. Both are the same method.
-the okra or molokhia that is assigned to any type of bread, or with a spoon, like soup.
- You can buy a ready-made soup to save time, but it is better to buy half a kilo of meat and put it in five cups of boiling water in a pot, add peeled small onion that is boiled in water, salt and black pepper, and your favorite seasoning for the meat.
- It is preferable to serve it with meat, green salad, and some of your favorite pickles
