Original Fantasy Fudge Recipe Fudge

I got this recipe off a Kraft Jet Puff Marshmallow Creme jar.

I make this fudge this time of year..

Original Fantasy Fudge Recipe Fudge Recipe

Ingredients

ORIGINAL FANTASY FUDGE RECIPE
INGREDIENTS
3 cups sugar
3/4 cup butter or margarine
2/3 cup evaporated milk
2 cups semi chocolate chips (I used Tollhouse)
1 jar of marshmallow crème, Kraft jet puffed 7 oz. jar
1 tsp. vanilla

Directions

DIRECTIONS
Grease a 9 X 13 ” pan. Alternative and much easier is to line a 9 X 13? pan with parchment paper, this allows a much quicker release and clean up.
In a medium pot, mix sugar, butter and milk. Bring the mixture to a boil using medium heat, stirring constantly so the sugar dissolves and the mixture does not burn on the bottom of the pot.
Remove the thickened mixture from the heat and add chocolate chips. Stir in the chocolate chips, add marshmallow crème and vanilla.
Pour into the prepared pan to cool.
For those who like nuts, this is a recipe which can easily be adjusted to 1/2 and 1/2 by using two smaller pans. After transferring 1/2 of the Fantasy Fudge mixture to one pan, add nuts to the remaining mixture and pour into a second prepared pan.
Prep Time: 1 hours, 30 minutes

Smothered Chicken with Creamed Spinach, Bacon, Mushrooms

I cooked this tonight! It was delightful! I use lots of online recipe sites to keep food from being boring. I do tweak most and add my own touches. I'm fortunate to be able to cook for my father, mother and mother 2 (a woman who has been like a mother to me) every Sunday and Wednesday. I promised them those days!

Smothered Chicken with Creamed Spinach Bacon Mushrooms Recipe

Ingredients

Ingredients

Chicken:
1 tablespoon butter
Any chicken pieces you like best or have on hand (smile)
salt
lemon pepper seasoning
paprika

Creamed spinach:
1 tablespoon vegetable oil
10 oz fresh spinach
4 garlic cloves, minced
2/3 cup half and half
2/3 cup mozzarella cheese, shredded
1 small onion chopped

Other Ingredients:
1 tablespoon vegetable oil
4 oz mushrooms, sliced
4 slices bacon, cooked, chopped
4 slices of Pepper Jack cheese (Monterey Jack Cheese with Jalapenos)

Directions

Preheat the oven to 375 F.

Butter the bottom of the baking dish or spray your favorite oil or butter spray.(I used a 9X13 pan)

Generously season chicken on both sides with salt, lemon pepper seasoning and a small amount of paprika.

Place the chicken into the greased baking dish and bake for 25 minutes at 375 F.

In the mean time, heat 1 tablespoon vegetable oil in a large skillet on medium heat. Add spinach and cook for only 1 or 2 minutes, covered, until the spinach is thoroughly heated through and start to wilt. Remove from heat.

Add minced garlic and half and half. Bring to boil. Add shredded mozzarella cheese and keep stirring, on high heat, until mozzarella cheese starts to melt - about 30 seconds. Reduce heat to simmer and keep stirring until you have a nice, smooth creamed spinach - about 30 seconds or 1 more minute.

Season with salt to your taste. Remove from heat.

In a separate pan, heat 1 tablespoon vegetable oil. Add sliced mushrooms and cook on high-medium heat for 1-2 minutes until mushroom caramelize. Do not salt mushrooms or it will prevent the caramelization.

Remove the chicken from the oven. Top each chicken breast with the creamed spinach, chopped cooked bacon, cooked mushrooms and broken slices of pepper jack cheese.

Bake in the oven, uncovered for 25 more minutes, until chicken is cooked through, no longer pink in the center, and the juices run clear.

Notes

I had thick chicken legs and I cooked them longer each time. The recipe calls for 15-20 min each time I cooked for 25 min.

I had a Monterey Jack/Cheddar mix and sprinkled it on top of the spinach mixture I also added finely chopped onions as I love onion and garlic in most of my recipes for flavor.

Marbled Pumpkin Cheesecake

From Sunset Magazine, this is a great Thanksgiving dessert. If you can't get the crust to work out, use the pre-made graham cracker crusts.

Marbled Pumpkin Cheesecake Recipe

Ingredients

Crust
8 Ounces Gingersnap cookies, crumbled
2 Tablespoons granulated sugar
3 Tablespoons butter (or margarine), melted

Filling
3/4 cup brown sugar, firmly packed
16 ounces Philadelphia cream cheese,
2 large eggs
1 1/2 teaspoons pumpkin pie spice
1 pound pumpkin, canned

Directions

Crust
a. Preheat oven to 325°F.
b. Crush enough cookies to make 1 3/4 cups crumbs.
c. In a 9" cheesecake pan with removable rim, mix cookie crumbs, granulated sugar, and butter.
d. Press over bottom and about 1 inch up pan sides.
e. Bake crust in a 325º oven until slightly browned, about 15 minutes.
f. If you can't make a good crumb crust, buy a Graham cracker one at the store. It is not as good, though.

2. Filling
a. Meanwhile, in a food processor or in a bowl with a mixer, blend cream cheese, brown sugar, and eggs until smooth.
b. Spoon 1/2 cup of the cheese mixture into a small bowl.
c. Add spice and pumpkin to remaining cheese mixture and mix well.

Assembly and cooking
a. Pour pumpkin filling into hot or cool crust.
b. Drop rounded tablespoons of the reserved cheese mixture onto the pumpkin filling. With a knife tip, swirl to marble the white and orange mixtures.
c. Bake in a 325 oven for about 1 hour; until the center barely jiggles when cake is gently shaken.
d. Cool on a rack. Cover and chill until cold, at least 2 1/2 hours.
e. Run a knife between the cake and pan rim; remove rim.

Notes

Since I use the pre-made crusts, I usually have some filling left over, so I pick up some graham cracker tart shells (mini pie crusts) and make mini cheesecakes. Recommended.

Apple Bread Pudding

When you first hear the name, Bread Pudding, may not sound too interesting. However, its a really tasty, rich dessert that's hard to turn down once you’ve tried it. Traditional bread puddings contain egg yolks and so a lot of fat; but this recipe relies on the whites and adds apple for extra flavor.

Apple Bread Pudding Recipe

Ingredients

10 Egg Whites
10 Slices of Bread
½ Cup Butter
¼ Cup Applesauce
1 Cup Zero Calorie Sweetener
1 Teaspoon Cinnamon
1 Medium Apple, diced
1 Teaspoon Vanilla Extract

Directions

First, place slices of bread on a baking sheet and cook for 10 minutes at 375 degrees Fahrenheit, flipping halfway through. Melt butter and mix in applesauce. Cut bread into one-inch cubes and toss with butter/applesauce mixture. In a mixing bowl, combine eggs with apple pieces, vanilla extract and sweetener. Fold in bread cubes. Next, pour the mixture into a baking dish and sprinkle cinnamon on top. Lower heat to 350 degrees and bake for 30 minutes, until golden brown.

Vegetarian medley

I quite literally just threw some ingredients together that seemed like they'd be good. Boy, I was not even disappointed :)

Vegetarian medley Recipe

Ingredients

1/2 bag of frozen quinoa
1 cup of frozen kale
4 cherry tomatoes (diced)
1/4 cucumber (diced)
Viola Feta cheese (diced)***
Drizzle of Olive oil

Directions

Steam cook the quinoa and kale together.

After steaming, add your diced produce, and Viola Feta. *The amount of Feta is to your discretion. I use this to negate the need for salt or any other seasonings. Just to keep things simple. ^_^

Mix all the ingredients well, with a drizzle of Olive oil, and enjoy!
