Maple Butterscotch Blondies

Blondies are a great alternative when you're feeling overloaded from a lot of other chocolate desserts, meaning brownies are out of the question. They make a good gift or party platter and are low in sugar and fat.

Maple Butterscotch Blondies Recipe

Ingredients

1.5 Cups All Purpose Flour
¼ Cup Butter
¼ Cup Applesauce
4 Egg Whites
¾ Cup Sugar-Free Maple Syrup
½ Cup Zero Calorie Sweetener
2 Teaspoons Baking Powder
1.5 Cups Butterscotch Chips

Directions

First, preheat oven to 350 degrees Fahrenheit. Next, spray a 9 x 13 glass baking dish with non-stick spray. Mix together flour and baking soda in a small bowl. Mix sweetener, syrup, butter and applesauce with an electric mixer. Add egg whites, continuing to beat. Gradually add the flour, beating continuously, and then stir in the butterscotch chips. Pour batter into the pan and bake for 20-30 minutes, or until a toothpick inserted comes out clean.

Smoked Pecans

I had a craving for something sweet n salty so I threw this together. I write/invent recipes and I hope you all like this one.

Smoked Pecans Recipe

Ingredients

7.25 oz. pecans
2 Tbsp. brown sugar
1 Tbsp. granulated sugar
1 1/2 tsp. salt
2 tsp. smoked paprika
1 Tbsp. honey

Directions

Preheat the oven to 400°
Line a cookie sheet with foil. Toss the pecans with all the dry seasoning then spread it into a single layer on the cookie sheet.
Turn the oven off and place the cookie sheet on the center rack for no more than 2 minutes then toss the pecans and place the cookie sheet back in the oven for 2 more minutes. Remove it and quickly drizzle with honey and toss it again then let it cool for 30 minutes.

Be very careful not to walk away cause this will burn easily, I burned my first batch, lol!

Nothing is as Midwestern as the summer cookout... grilled corn, lemonade, potato salad, chips, and best of all, the hamburger. Brisket and ribs can become tedious due to their long cooking times, but the short grilling time and simplicity of burgers leads to yummy variations.

The best burgers are often cooked on a griddle in butter, but some simple modifications can create similar wonderful, greasy flavor in a grilled burger, perfect for a cookout. Adding shredded cheese to the uncooked patty adds moisture, even when cooked to medium. Any cheese will work. Then add your favorite toppings.

Best of the Midwest Burger Recipe

Ingredients

2 pounds ground beef
1/4 cup finely grated onion
1 tbsp cream
Salt and pepper to taste
1/2 cup shredded Monterey Jack
6 slices of favorite cheese (Monterey Jack pictured)
6 strips of bacon
6 buns
butter

Directions

1. Cook bacon, let cool, remove from skillet and finely chop
2. Add beef, onion, cream, shredded cheese, salt, pepper, and chopped bacon to bowl, mix thoroughly
3. Roughly form six equal patties by hand
4. Cook approximately six minutes per side over high heat on charcoal or gas grill, or until the internal temperature reaches 160F
5. Optional: Top burgers with slices of cheese a minute before removing from grill
6. Toast buttered buns on grill
7. Add burgers to buns, garnish with any additional toppings, and enjoy!

To me there's nothing more delicious than the combination of potatoes, cheese, and sour cream mixed and melted in a casserole. Easy-Peasy Potato and Cheese Casserole is easy to fix, and a versatile dish. If you need a gluten-free option, it can be tweaked and made to suit your taste. If you aren't big on onion flavor, you can leave them out, and the dish still tastes unbelievable.

If you're looking for a casserole that's a cinch to prepare, this is it. Instead of spending loads of time chopping and dicing potatoes and onions, grab a bag of the frozen diced hash brown potatoes in the freezer aisle, and a container of sliced onions in the produce section. The preparation is as easy as taking the ingredients out of the bag when you get home from the store. I usually have most of the ingredients on hand. The potato casserole is a great dish to go along with any chicken, pork, or steak meal.

Easy Peasy Potato and Cheese Casserole Recipe

Ingredients

1 32 oz. bag of frozen diced hash brown potatoes
1 10.75 oz. can cream of chicken soup (this can be substituted with agluten-free cream of chicken soup, or left out of the recipe)
2 cups of shredded cheddar cheese
¾ cup of sour cream
¼ cup of diced onions
2-3 cups Corn Flakes (If you are trying to stick to a gluten-free diet,there are brands out there that have a delicious alternative to Corn Flakes)
1 stick of butter

Directions

Preheat oven to 350-degrees. Begin by adding the entire bag of frozen cubed potatoes, cream of chicken soup, shredded cheddar cheese, sour cream, and diced onions in a large bowl. Mix the ingredients together until well blended. Don't be afraid if it gets messy. If you're like me, chances are you will sling a few potatoes around. Once the food is mixed, pour it all into a large casserole baking dish. Cover with Corn Flakes. Finally, melt the butter in a microwave-safe bowl and pour over the Corn Flakes. Bake in the oven for one hour.

Ingredients

10g/4oz butter or stork margarine, softened
110g/ 4oz caster sugar or vanilla sugar
2 eggs, lightly beaten
1-1/2 tsp vanilla extract
110g /4oz self-raising flour
1/4 teaspoon salt
2-3 tbsp milk

Directions

Preheat the oven to 170 C / Gas 3.

1.In a large bowl add in butter and sugar beat for 5 minutes until light and fluffy.
2.Add in the vanilla and the eggs mix in until smooth and evenly mixed.
3.Add the flour and mix until it is smooth, do not over mix the batter. Then Pour into cupcake cases.
4.Bake for about 15 to 20 minutes. They will be perfect when they spring back.
Leave on a cooling rack for 30 minutes or until cool, then decorate.

280g/10oz icing sugar
1-2 tbsp milk
a few drops food colouring

Perfect Pumpkin Tarts Recipe

Ingredients

Crust Ingredients:
1/3 Cup Zero Calorie Sweetener
1 Egg
1 Egg white
2 Cups Ginger Snap Crumbs

Filling Ingredients:
½ Cup Brown Sugar
¼ Cup Zero Calorie Sweetener
1 Can Pumpkin
1 Cup Skim Milk
3 Egg Whites
Cinnamon and Ginger to taste

Directions

First, preheat oven to 350 degrees Fahrenheit. Next, combine ginger snap crumbs, egg and white and sweetener in a bowl and mix well, until moist and malleable. Pour this into tart pans and press up the sides and on the bottom. Bake for 10 minutes.

As those bake, mix the egg whites, spices, pumpkin, sweetener and sugar. Pour in the milk gradually and mix until even. Pour into the crusts after they have cooled and bake for 20 minutes, or until filling is set.

Ingredients

1 can (8oz) Pillsbury Crescent Dinner Rolls

1 cup pizza sauce

3/4 cup shredded mozzarella cheese (3oz)

1/4 cup pepperoni (12 slices) chopped

1 teaspoon grated Parmesan Cheese

Directions

Step 1.Heat oven to 375 degrees

Unroll dough on ungreased cookie sheet,Separate into 8 triangles.

Step 2.In small bowl,mix pizza sauce,mozzarella cheese and chopped pepperoni.Place about 1/4 cup filling on each of 4 triangles,Spreading within 1/2 inch of edge.

Step 3.Gently stretch remaining 4 triangles,turn over onto filled triangles firmly pressing edges with fork to self.

Step 4. Sprinkle each triangle with 1/4 teaspoon grated Parmesan Cheese.With fork press top of each to allow steam to escape.

Step 5. Bake 13 to 15 minutes or until brown.Serve warm with additional pizza sauce on the side for dipping.

Ingredients

1 1/4 cups firmly packed light brown sugar
3/4 cup JIF® Peanut Butter
1/2 cup Butter Flavor CRISCO® Stick
3 tablespoons milk
1 tablespoon vanilla
1 egg

1 3/4 cups sifted all-purpose flour 3/4 teaspoon baking soda 3/4 teaspoon salt Add all ingredients to list

Preheat oven to 375 degrees F.
Place sheets of foil on countertop for cooling cookies.

Combine brown sugar, JIF peanut butter, shortening, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.

Combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended.
Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet. Flatten slightly in crisscross pattern with tines of fork.

Bake one baking sheet at a time for 7-8 minutes or until set and just beginning to brown. Do not over-bake.

Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.

2 and 3/4 cups All-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter softened
1 and 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract

Directions

Preheat oven to 375 degrees

1. In large bowl,cream together butter and sugar and then add egg and vanilla.

2.In small bowl,stir together flour,baking soda and baking powder.

Roll individually pieces of dough into balls and place on ungreased cookie sheet.

Bake 8 to ten minutes or until golden brown.

Notes

You can decorate them anyway you choose.

The ones in the picture I just spread them with vanilla whipped frosting.

5 medium-sized potatoes
Salt, to taste
Pepper, to taste
3 tablespoons of butter
3 tablespoons white flour
1 clove of garlic (peeled and minced)
1 onion (peeled and sliced)
1 cup of milk
1 cup shredded cheddar cheese
Chives (as much as you like, I love chives and am embarrassed to say how much I use)

Directions

5 medium-sized potatoes
Salt, to taste
Pepper, to taste
3 tablespoons of butter
3 tablespoons white flour
1 clove of garlic (peeled and minced)
1 onion (peeled and sliced)
1 cup of milk
1 cup shredded cheddar cheese
Chives (as much as you like, I love chives and am embarrassed to say how much I use)



1. Wash and peel your potatoes.
2. Slice potatoes into discs, roughly half a centimeter thick. For all my non-metric friends out there, think 2-3 silver dollars stacked on top of each other.
3. Line the bottom of your slow cooker pot with the first layer of potato slices, add salt and pepper to your taste or dietary liking, then add the next layer of potato slices and add salt and pepper again. Repeat this process until you're out of potato slices or you get tired of doing it, whichever comes first.
4. Melt butter in a pot set on medium heat. As soon as the butter is melted, whisk in flour until the mixture becomes thick and doughy. Add sliced onions and minced garlic. Keep on whisking and gradually add the milk.
5. Add the shredded cheese and continue whisking until you have something thick, but smooth, or get tired of whisking, whichever comes first. Lets be real, having pockets of semi-melted cheese in your dish can be a treat.
6. Pour your cheese sauce into the slow cooker pot on top of the layered potatoes. You may need to tip the pot back and forth so the sauce gets everywhere.
7. Cook on high in the slow cooker for ~3 hours, and then check every 15-30 minutes until you can easily poke through the potatoes with a fork (in the future, just remember how much time it took your slow cooker to get it perfect and you wont need to do this again.) Use chives for garnish.
