So easy just to do the casseroles for the week and nuke them when I get home from work. And so love the Tuesday night dinner out with my daughter for something different.

last night was steak and vegies, tonight will be casserole with steamed vegies, tomorrow whatever the conference gives, and Tuesdays with my daughter. Love the planning. Looks like I will have to do some planning later this week as no nuke meals around.

Soft fluffy mashed potatoes with cheese, the kid has gone vegetarian? With peas and corn and gravy? I wont tell the kid if you don’t where the gravy comes from!

Method
Boil potatoes that are cut fine saves on cooking time, drain when soft with fork, place margarine in pan then reintroduce potatoes mash a little then add a splash off milk, and mash a bit more, then add cheese and mash till cheese has melted, serve on plate then add peas and corn with gravy on top!

By this time your potatoes are that soft that KFC would want your recipe! The kid loves it!
professor cheers

Yumeeeee.

Skippy does taste great, very lean, don't need to have lots, and is very healthy. Especially for diabetics because of no fat and rich in protein (hint, hint Micky). Every now and then, I do skippy sausage rolls and take them to work for people to try. Never any left (must be the cook) and I have standing orders from previous work places to make sure I send them some over whenever I make them.

Had Beef Wellington last night. Best part of the whole 3 courses. They really need to learn how to do mash spuds.

And Blizz, mash tastes good adding a bit of garlic, or just finely diced raw onion. Yummo
