I discovered this recipe by complete accident. It is possible to prepare cauliflower and make it taste good. Just hear me out.
This is an easy hot dish that my kids love. I got the recipe from a friend who worked at a daycare. It sounds repulsive, but it's not too bad in a pinch.
I created it myself.I refuse to eat anything but homemade no processed food for this gal.
I've never had to send out a search party to figure out what was in my food. LOL!!!
ok, So I get bored, i get silly.
Tzatziki:
4 cups (32 ounces) plain yogurt
1 medium cucumber, peeled, seeded and grated
1/2 teaspoon salt
1/4 cup olive oil
1/4 cup white vinegar
2 garlic cloves
Line a fine mesh strainer with two layers of cheesecloth. Place yogurt in strainer over a bowl. Cover and refrigerate for at least four hours or overnight.Drain and discard liquid in bowl; set yogurt aside. Place cucumber in a colander over a plate; sprinkle with salt. Let stand for 15 minutes; discard liquid.In a small bowl, whisk oil and vinegar until blended . Stir in the garlic, yogurt and cucumber.
I add fresh basil, ground in a mortar. And dried dill.
I made bigger portions for pot luck or staff shared lunch and went very well.
