Egg And Salsa Tortilla
Egg And Salsa TortillaTortillas are lightly fried before
being covered with the tomato flavored
salsa .Eggs are the broken on top of
the tortilla and fried to complete this
lovely Mexican breakfast.
Ingredients:
1 tortilla
olive oil
2 eggs
salt and black pepper
Salsa 100g whole tomatoes
1/2 onion
dash of chilli sauce
salt and black pepper
pinch of parsley
Directions:
Chop the onion up finely,put 1tbsp of oil
in to a fying pan and fry the onion until
the onion is clear.Add the tomatoes and crush
them while you stir.Cover the frying pan
with a lid and fry for about 10 minutes over
low heat.Once the liquid has reduced,add a
dash of chilli sauce and some salt and pepper,
then turn the heat off.
Put a dash of olive oil into the pan and put
the tortilla into the frying pan.Cover the
tortilla with salsa and place 2 eggs on top.
Sprinkle some salt and pepper and put a lid on
the pan and till tha eggs are set.Put onto your
plate and sprinkle on some parsley .
