Lonely1: And for the pepper lovers..stay away from any that is purple.
I know of many other varieties of Chiles (peppers) and some are not "hot" because their capscicine content is low although some people think that Chiles are all "hot".

As a child my mother would prepare food and have the salsa in a separate container for my Dad to get it, we as children (my brothers and I) hardly would taste some chile. In fact I got used to have some salsa and chile after I met my children's Father because he liked his food hot!

Food is to enjoy to be able to create and taste a combination of flavors.. Chiles rellenos en Nogada Roasted Poblano peppers filled with a mix of meat, almonds, a type of cactus candy (small cubes), etc.. sour cream + walnut, those are delicious and can be made vegetarian as well.
Enmoladas Made with a mix of dry peppers (Guajillo, ancho..) and lots of ingredients: pumpkin seeds, raisins, pepper's seeds, cinnamon, etc and some chocolate, yes chocolate!
