jbibiza: Real cooking doesn´t really take much more time then packaged food cooking. It´s all about good ingredients and simple preparation.
The meal I cooked today was about 10 min prep and ten minutes cooking. Earlier today I cut my veggies into med. strips and threw them in a ziplock bag with Marinade. Also put the steak in a ziplock with marinade.
Simple marinade is 3 parts acidic to 1 part olive oil and what ever seasonings you like. The acidic is usually vinegar... I prefer balsamic but it can be a mixture... when I cook chicken I like lemon juice, with pork I use orange juice and if you have a tougher cut of meat adding pineapple juice to the marinade helps tenderize it... pineapple juice has an enzyme that breaks down the fibers in meat. And I love garlic so I always put plenty of crushed garlic in my marinade. Then I just throw it in the fridge until I´m ready to cook it.
Get the grill nice and hot put your steak on first, how long it cooks depends on how you like it... I like rare so it´s about 3 to 4 minutes on each side. When your steak is finished remove and cover in aluminium to keep warm and let it rest. If you don´t rest meat before cutting into it all the juices come out, if you let it sit the meat re-absorbes the juices.
You can do this with any kind of meat, chicken, fish, shellfish. The only thing with fish and shellfish is to use opposite proportions of oil and acidic as acid will cook fish and shell fish, and only marinade about 20 min.Then put your veggies on the grill about 1 to 2 minutes each side, and your done.

I keep a whole bunch of different kinds on hand....and I usually don't use them for salads.

I sometimes did the same when I lived in the states... here in Ibiza there is very little premade foods so I´m back to everything from scratch.... and now that you hear so much about additives and preservatives I prefer to make my own.
I love Tabouli but have never made it... do you have a good recipe?
Had the tofu bacon/cucumber/tomato munchies. Now am having another tomato sandwich, pickles w/mayo and harvest grain chips, kale, Ice water. Have a vernors ginger ale, rice milk and peaches in my bag.
Wanted kale & seaweed over couscous but the storm knocked out our power last night while I was here in the University Library.
We might be out for days, as many of the power employees went to Texas/ Louisiana to help after the hurricanes down there.
tufty: Tortellini for me....Well, half a portion.... I guess the idea when you strain the water is to put something underneath first.... and not pour half of the Tortellini into soapy dishwater.....

I also like making a lot of my own marinades. Although there IS a great salad dressing/marinade that's sold locally that I love to use to marinade a lot of my meat in. It's a greek salad dressing. And it is absolutely DELICIOUS!!
I also add a lot of spices to my meats. My mother was one who didn't like us being in the kitchen when she was cooking. So needless to say, we kids didn't learn a lot of cooking skills from her. And when she made meats, she usually fried them... all kinds. She made her roast beef in the electric skillet!
My ex-husband was a great cook. I learned quite a bit from him about cooking. Then my one ex-boyfriend was a really good cook too. Learned from him as well. Plus I experimented a lot.
And I ALWAYS had my daughter right by my side in the kitchen. She now loves to cook too. And is quite good at it!!

I know what you mean about mothers not letting you underfoot...and so yes, I let my sons cook with me if they want. My mother just dried out meatloaf and pork chops...overcooked them, I guess. Otherwise, I loved her cooking, and she's still the one I call if I have questions! That she has the patience for, go figure!

Now, my mom made KILLER meatloaf! And she always made a big bowl of homemade scalloped potatoes with it. YUM!!
When my daughter was younger, I'd buy separate small loaf pans. Then I'd set out several ingredients (cheese, ketchup, mustard, bread crumbs, mushrooms, peppers, onions, spices) & we'd each make our own. Then, we'd let each other taste our creations & see which one we thought was better. It was sooo fun!!
