I ask this, because I have, and, despite my best efforts, it was always doomed to failure, and I think if faced with that choice again, I would shy away from it.
The question assumes that we knew before we got involved, and that's not always apparent. Afterward, we may have already become attached, and the relationship may have its own momentum.
But if one did know beforehand, one would have to balance that downside against the weight of one's own attraction and feelings.

I have and it really depends on the illness. I find being a friend is better than dating for both.

Usually you do not know, as many are well versed in having covered it up, all of their life. It is second nature to them, however, they can only cover it up for so long....then comes the crash.
I blame myself to sticking in, to be honest. I had lots of chances to walk, and sometimes I did, but we always got back. In the end, it was a total waste, it drains the hell out of you, has your questioning your own sanity, and, for all your help, it rarely works or gets appreciated.
Depends on what the illness is. I had an exgirfriend who had more prescriptions for mental disorders than most pharmacies. Between the mood swings of being a normal woman and the meds she was on, it was all too much for me to take. Not to mention the side effect of the medication she was taking which added more stress to the situation. I can't say that I would never date a woman with serious mental health problems again, but I would be very cautious and have m guard up if the situation ever arose again.
