A nice two year old Balderson white cheddar is delicious. There are some six year old ones that aren't bad. Years ago I used to be able to get twenty year old cheddar (white) that crumbled when you cut it and smelled like a gym bag but it made your gums itch when you tasted it yummmmm.
Ausiago makes a fantastic dip and is simple delicious.

Hey Rider I remember the 20yr old cheddar I used to get from Stouville barns...at the Mennonite market I used to also pick up an aged cheddar cured in wine...man! it would make your eyes water it was that good

Just one of the many things I miss about the old market and auction barn. That twenty year old was wrapped in a waxed brown paper and every time I opened the fridge it was like a stinky old gym sock...yum yum from all of your old memories of "Stouffville"
