Too Much Chocolate

My sister gave me this recipe a long time ago. It is easy to make, and very appreciated by all. I often make them for pot-luck lunches at work. It was the inspiration for my chocolate truffles.

Too Much Chocolate Recipe

Ingredients

1 Lb. Bittersweet (or semisweet) Chocolate, coarsely chopped
8 Oz (sweet) butter, Unsalted
6 Eggs, lightly beaten

CHOCOLATE GANACHE GLAZE
2/3 Cup Heavy cream
6 Oz Semisweet chocolate, finely chopped

Directions

1. Preheat the oven to 425° F. Wrap the outside of an 8-inch springform pan in a double layer of aluminum foil to prevent seepage. Butter the pan and line the bottom with a round of parchment or waxed paper. Butter the paper.
2. Combine the chocolate and butter in a large metal bowl over a pan of hot--not simmering water. (the bottom of the bowl should not touch the water). Let stand, stirring occasionally, until the chocolate is smooth and melted, or you may melt it in a glass bowl in a microwave oven on high (100%), stopping and stirring every 15 seconds; remove the chocolate when there are still a few lumps and stir until completely smooth.
3. Put the eggs in a large mixer bowl set over simmering water and stir constantly until warm to the touch, about three minutes; remove from the heat. With an electric mixer, beat the eggs until they triple in volume and form soft peaks when the beater is lifted, about 5 to 8 minutes. (to ensure maximum volume if using a hand held mixer, continue to beat the eggs over simmering water until they are hot to the touch, about 5 minutes, then remove from the heat and beat until cool.)
4. Fold half the eggs into the melted chocolate until partially incorporated. Add the remaining eggs and fold until they are just blended and no streaks remain.
5. Pour at once into the prepared springform pan and smooth the surface with a spatula. Place in a larger roasting pan and add enough hot water to the pan to reach about 2/3 of the way up the springform.
6. Bake for five minutes. Cover the top of the springform pan loosely with foil and bake for 10 minutes longer. Remove the cake from the oven and let cool on a rack for 45 minutes, then cover and refrigerate until chilled and very firm, about 3 hours.

Notes

7. To unmold, run a small spatula or blunt knife around the edge and remove the side of the springform. Carefully invert the cake onto a plate that has been covered with plastic wrap and remove the bottom of the springform. Invert the plate again onto a cardboard round or a cake plate. Cover and refrigerate for up to two weeks before serving.
8. If you want to cover the cake with Chocolate Ganache Glaze, set it on a rack or tuck strips of waxed paper around the bottom of the cake. Pour the tepid glaze onto the center of the cake, letting it cascade over the sides. Run a long metal spatula lightly across the top so that the glaze will not be too thick. If necessary, use the spatula to patch any bare spots. Work quickly before the glaze sets. Prick any air bubbles with a needle or pin. Carefully remove any strips of waxed paper. Let the glaze stand undisturbed until set, 2 to 3 hours at room temperature or 30 minutes in the refrigerator.

DIRECTIONS FOR THE CHOCOLATE GANACHE GLAZE
1. In a small heavy saucepan, scald the cream by heating it until it almost starts to boil. Remove from the heat and immediately add the chopped chocolate. Cover and let stand for 5 minutes; then stir gently until the chocolate is fully melted and smooth. Let cool until tepid.
2. Stir the glaze to test it. It is ready to use when a small amount mounds just a tiny bit when dripped from the spoon before disappearing into the mixture. If the glaze is too thick and the mound remains on the surface, add warm water or liqueur by the teaspoonful, testing until the consistency is correct. If for some reason the glaze remains too thin, stir in more finely grated chocolate, heat until melted and then let cool again.

Apple Cider Doughnut Cake

Apple Cider Doughnut Cake Recipe

Ingredients

Cake
1 box Betty Crocker™ Super Moist™ yellow cake mix
3/4 cup apple cider
1/2 cup butter, melted
4 eggs
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 cup coarsely shredded peeled tart apples (2 medium)

Toppings
3 tablespoons butter, melted
1/4 cup sugar
1 teaspoon ground cinnamon

Directions

1 Heat oven to 350°F. Generously spray 12-cup fluted tube cake pan with baking spray with flour.
2 In large bowl, beat cake mix, apple cider, 1/2 cup melted butter, the eggs, 2 teaspoons cinnamon and the nutmeg with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Stir in apples. Pour into pan.
3 Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Remove from oven. Let stand 20 minutes; run metal spatula around outer and inside edges of pan to loosen cake. Remove from pan to cooling rack; place cooling rack over waxed paper.
4 Brush top and sides of cake with 3 tablespoons melted butter. In small bowl, mix sugar and 1 teaspoon cinnamon until blended. Press 2 tablespoons cinnamon mixture up side and top of cake with hand. Let stand 20 minutes. Repeat with remaining cinnamon mixture. Cool completely, about 1 hour.
5 Store loosely covered.

Chocolate Truffles

This is how I make really good chocolate truffles. I've been making them for over 20 years, everyone seems to like them.

Chocolate Truffles Recipe

Ingredients

Ingredients:
Shell
1 ½ - 2 lbs. bittersweet chocolate (72 – 85%)
I use Scharffen Berger 72% or a mix of 72 and 85% baking chocolate

Ganache
6 oz. semisweet chocolate (60 – 65%) I use a mix of Scharffen Berger 60 and 72%
3 tbsp. sweet butter (best available quality)
1 cup heavy cream (best available quality)
Vanilla extract, finest quality

Directions

Making Truffles

Equipment:

Tempering box
Truffle molds
Small paint brush
Marble slab, or other cool surface for working on
Bowl large enough for the ganache
A good thermometer

Procedure:
First, make the shells. Chop up the bittersweet chocolate into small bits and put them into the tempering box, reserving ¼ teaspoon of chocolate chopped very fine. Set the box to about 115 degrees F. When the chocolate is all melted and about 115 degrees, turn it down to about 95 degrees F. When it gets there, take some of the chocolate and put it on the marble slab and stir it around until it gets thick, then pour it back in. When that is mixed in, pour in the reserved chocolate and stir it in. That will provide seeds for the chocolate crystals to form around. After a few hours, the chocolate is ready for the molds.
Use the small paint brush to paint the chocolate onto the inside of the molds. I use three layers to make sure there aren’t any gaps or holes. Let them cool overnight.
Now you can make the ganache. Chop up the semisweet chocolate and put it in the large bowl. Heat the cream in a small heavy saucepan until it is almost simmering, then pour it over the chocolate and stir it in. It will take a couple of minutes to get it smooth. Add the butter and one teaspoon of vanilla to the chocolate. Let it cool for an hour or so. It should be the consistency of soft margarine.
The easiest way to put the ganache into the molds is to pipe it in, using a pastry bag or two gallon-sized plastic bags set one inside the other, and one corner cut off. Pour the ganache into the bag, and squeeze it into the molds. Fill them to a bit below the top, to allow space for the bottom.
When they are all filled, use the paint brush to paint the bottoms onto the molds, same as doing the shells. Let everything cool overnight. Turn the molds upside down and remove the truffles.

Notes

I buy nice small boxes that hold four truffles, and plastic inserts to hold them securely. I buy full page sticker paper from Office Depot to print my labels onto. The sticker paper is glossy and looks more professional. Use Epson Photo Quality Self-adhesive Sheets or equivalent.

Spiced Biscuit Brownies

I am kind of a chocolate addict…I just love the stuff, and one of the recipes I had been trying to perfect, was chocolate brownies. So after several batches (apologies to my colleagues at work for the extra kilos I have made you put on and to my friends, for the great looking photos that make you want chocolate), I finally managed to come up with a fairly fool proof brownie recipe, and with an added twist.

Spiced Biscuit Brownies Recipe

Ingredients

2 eggs, medium size
125gr butter, unsalted
150gr dark chocolate
200gr dark brown sugar
70gr self raising flour
20gr raw cocoa powder
4 to 5 spiced biscuits, broken in pieces

Directions

Pre-heat your oven to 160 degrees Celsius with hot air, and line a 20 x 30cm baking tray with baking paper.
Put a pot on low heat and melt the butter, chocolate and sugar together. Once the butter and chocolate are melted, take off the heat. Add in the sugar bit by bit. Stir the mixture well with a wooden spoon or spatula, to ensure there are no lumps of sugar left.

Leave for approx. 5 – 10 minutes off the heat, so the mixture cools down a bit. This is to ensure your eggs will not “cook” in the heat of the mix, once we add these in one by one and stir again, until you have a smooth mass.

Transfer to a bowl and mix in the flour and cocoa powder, folding these in, in parts.
Poor the mix into the baking tray, and bang it a few times on the counter to level out the mixture, and get rid of any air pockets.

Break the biscuits in small pieces and push them into the dough.
Bake for approx. 25 minutes

Notes

if you want a crispier texture, for an extra 5 minutes. Leave to cool down fully ( I know, this is the hard part, ’cause the smell is amazing….) before cutting into pieces. In an airtight container, these will last up to 3 or 4 days, unless you eat it all before (like me).

Unbelievable Bundt Cake

Bundt cake is a classic Christmas dessert, but it seems that no one's really sure how to make it correctly. The ideal Bundt cake is moist and rich, but not overpowering in sweetness. The richness and moistness in traditional Bundt cakes comes from butter, but this recipe substitutes applesauce instead and uses sugar-free maple syrup as a sweetener.

Ingredients

10 Tablespoons Applesauce (unsweetened)
1 Cup White Pastry Flour
1 Cup Whole Wheat Pastry Flour
2 Eggs
1 Large Apple, chopped
1/3 Cup Sugar-Free Maple Syrup
15 oz (1 can) Pumpkin OR Sweet Potato Puree
1 Tablespoon Cinnamon
1 Tablespoon Ginger
½ Teaspoon Baking Soda
2 Teaspoons Baking Powder

Directions

First, preheat oven to 350 degrees Fahrenheit. Next, mix spices, baking powder, baking soda and flour in a bowl. In a separate bowl, combine applesauce and maple syrup and add the eggs, one at a time. Mix well and add apple pieces and pumpkin/sweet potato puree. Add in dry ingredients and mix until smooth. Pour batter into a 10 inch Bundt cake pan sprayed with non-stick spray. Bake for 60 minutes or until knife inserted comes out clean.

Baking is one of my favourite pastimes......especially celebration cakes where I can let my imagination run wild on the decorating.....

Ingredients

For the bottom layer......20 large eggs, 20oz caster Sugar, 20oz self raising flour......grated rind of three lemons plus their juice.........for the top layer.......12 large eggs, 12 oz caster sugar, 8oz self raising flour, 4oz 70% chocolate or cocoa powder............(these quantities can be easily scaled down when making much smaller cakes).....

Directions

Beat eggs and caster sugar until thick and creamy......sieve in the flour in small batches and gently fold in.....finally add the lemon rind and juice......same applies to chocolate cake......just to mix the choc powder with the flour before folding in.......most people would probably make smaller versions so just use tins that you would normally use......larger one for the lemon and smaller for the chocolate........

Notes

The lemon cake can be drizzled with some warm melted sugar and lemon juice while still warm....when totally cooled can then be filled with raspberry jam, fresh cream and fresh raspberries......Covered on the outside with an icing of cream cheese, icing sugar, and lemon juice.....a little yellow food colouring enhances the look and lets people know that it is a lemon cake...... The chocolate one can be layered with chocolate ganache in the middle and also covered on the outside..........After all tbese basics are done you can let your imagination run wild with any sorts of decorations you fancy.......I always love to add some fresh flowers and lots of fresh fruit as decorations......

4 eggs

Vanilla flavour extract

Sugar

Canola Oil

Flour

Sweet of milk/ caramel 1 jar

Custard Cream 1 bag

Directions

I used a tupperwear thingie were I mixed the 4 eggs with the Canola Oil and the Vanilla extract using an electric hand mixer. Slowly and sexily I added the sugar and the flour.

Threw the mix in the oven for 27 minutes.

I decorated with sweet of milk/ caramel in the middle.

On top I added Instant Custard Cream.

Did not expend more than 70 pesos on this.

Cupcakes!

I got this recipe from a Spanish book my mum owns.

Cupcakes Recipe

Ingredients

100 grs of butter
100 grs of sugar
2 eggs
100 grs of flour
1 lemon

Directions

Mix the butter and the sugar until you they've formed a soft cream.
Add the grated lemon peel and next the eggs one by one mixing with a wooden spoon.
Bit by bit add the flour.

Lastly fill the 2/3 parts of the cupcake molds.
Cook for 20 minutes in the oven.

Remove them, let them cool and eat up!
Yum yum :)

Notes

You can add pretty much anything on top of this for decoration and flavour.

1/2 dozen strawberries put in chopper until desired chuck pieces.

On top of the strawberries I usually place a spoonful of whipped cream on top layer of strawberries.

Pound cake and cut it in half.

Spread both halves with whipped cream and one of the halves place a couple tablespoons on one and then put the top piece on top and then spread some whipped cream and top with chopped strawberries.
