This recipe was designed through trial and error but is really easy to make, refreshing and quite delicious.

Ingredients

There are no set weights and measures for this recipe. Simply use as much of each fruit as you want, in combination with the others, and as much fruit juice/water that you think will give you the consistency that you desire.

1. Fresh FRUIT (preferably chilled or frozen chunks):
Pineapple, Pawpaw/Papaya, Banana (and Mango, if you have access to this).

2. Freshly-squeezed or store bought FRUIT JUICE (preferably unsweetened Pineapple). Water may be used as a substitute if sweetness/sugar content is an issue.

3. One packet of orange/tangerine/raspberry/other EMERGEN-C crystals, or any other brand of Vitamin C crystals that you prefer.

Directions

a. Pour about 1 to 2 cups of fruit juice/water into the blender mug, according to the quantity of fruit you wish to blend. Then add the frozen chunks of fruit, and top this off with the Vitamin C crystals.
b. If you have a blender with a "SMOOTHIE" selection, then press it and let the 'smoothing' begin:). If not, then begin on the "CHOP" selection, before slowly moving to the "PUREE" selection (add more liquid if needed).
c. If you prefer a 'frosty' smoothie, then don't add too much liquid. If you prefer a 'thick but non-frosty one, then keep going until most of the icy-ness melts out

Notes

Not all fruit may be ideal for this recipe. I've tried adding watermelon and even honey dew melon, and the latter combines with the others, much better than the former. All in all, it's especially good early in the morning before breakfast, or during the day before lunch.

4 eggs

Vanilla flavour extract

Sugar

Canola Oil

Flour

Sweet of milk/ caramel 1 jar

Custard Cream 1 bag

Directions

I used a tupperwear thingie were I mixed the 4 eggs with the Canola Oil and the Vanilla extract using an electric hand mixer. Slowly and sexily I added the sugar and the flour.

Threw the mix in the oven for 27 minutes.

I decorated with sweet of milk/ caramel in the middle.

On top I added Instant Custard Cream.

Did not expend more than 70 pesos on this.

Healthy Pear & Parsnip Soup

This is a healthy tasty recipe to aid weight loss

Ingredients

Water
4 large Pears
3 Parsnips
3 Vegetable stock cubes
Black Pepper

Directions

Method:

Finely chop/ dice the parsnips and place in to a frying pan then top it up with water and season with black pepper Bring them to boiling point and reduce the heat to allow them to simmer until they soften
Add chopped pears and top the water up again enough to cover the ingredients then sprinkle and stir in 3 to 4 vegetable cubes to season
Allow the soup to simmer until at your desired texture
Serve and enjoy

Trini' Saltfish Buljol (stewed salted cod fish)

This is one of the historically popular foods of my county, and it is 'mimicked' throughout the Southern Caribbean. It is very tasty, easy to make and usually eaten with ground provisions, fried bakes/stove-top roasted bakes/oven-baked coconut bakes, 'sada' roti or even rice. "Bakes" are special breads (African heritage), and "Sada" (East indian heritage) is similar to pita bread.

Trini Saltfish Buljol stewed salted cod fish Recipe

Ingredients

1/2 lb boneless salted cod fish
1 cup tomatoes (freshly chopped)
1/3 cup onion (freshly chopped)
2-3 cloves of garlic (freshly chopped)
1/3 cup sweet peppers (freshly chopped)
1/3 cup carrots (freshly chopped)
1/3 cup pimento/chilli peppers (freshly chopped)
freshly ground black pepper (to taste)
3-4 tbsp Olive oil
Parsley (to garnish)
A few slices of Avocado (to complement)

Directions

1. Boil the fish until it's cooked, then shred into small pieces.
2. In a medium sized pot/pan, heat Olive oil on a low temperature before adding in all of the ingredients except the fish. Let them sauté (covered) at a medium temperature until almost fully cooked.
3. Add in the shredded fish and stir everything together. Add a little water, if more moisture is needed.
4. Let the contents simmer (covered) at the same temperature, for about 3 minutes.
5. Remove from heat and allow to cool for about 5 minutes.

Notes

a. Serve with bread, rice or any of the other sides mentioned previously.
b. Complement with a few slices of Avocado, and garnish with a few sprigs of Parsley.

Braai Sauce

My cousin taught me this recipe :) i not only used it for braai purposes but also just for frying chicken or steak in the pan normally.

Ingredients

2 tablespoons of tomato sauce
2 tablespoons of mayonnaise
2 tablespoons of chutney

Directions

Mix ingredients well together. Then add your meat or chicken, or patties to the sauce let it marinade for an 1 hour or 2 hours. Enjoy!

Depends on the amount you would to use for the marinade small, medium or large amounts.

I got this recipe from great aunt if like shrimp you will enjoy this and so quick and fast to make.

Ingredients

FOR SALAD
1 lb. shrimp, peeled and deveined
1 tbsp. extra-virgin olive oil
Kosher salt
Freshly ground black pepper
1/4 red onion, finely chopped
1 stalk celery, finely chopped
2 tbsp. freshly chopped dill
Toasted bread or butterhead or romaine lettuce, for serving
FOR DRESSING
1/2 c. mayonnaise
Juice and zest of 1 lemon
1 tsp. dijon mustard

Directions

Preheat oven to 400°F. On a large baking sheet, toss shrimp with oil and season with salt and pepper.
Bake until shrimp are completely opaque, 5 to 7 minutes.
In a large bowl, whisk together mayonnaise, lemon juice and zest, and dijon and season with salt and pepper. Add cooked shrimp, red onion, celery, and dill to bowl and toss until combined.
Serve on bread or over lettuce.

Italian Garlic rolls...

Marcella's Italian restaurant in the 1970's was a favorite place to eat.
Located near North Miami High School, it was the place to congregate after football games.
Her pizza was great but people raved about the garlic rolls.
Some places call them garlic knots because they are strips twisted into the shape as opposed to rolls that are just one lump of dough. The knot shape allows the spices to get into the roll and not slide off it.

Italian Garlic rolls Recipe

Ingredients

You can cheat and buy Pillsbury pizza dough in the refrigerator case of the local grocery store. That gets the look you want but not the flavor. I suggest going to a pizza shop and buying ready made dough for around the same price. A friend of mine worked there on weekends and told me the recipe. I've since found it listed on a nostalgia website and it's nearly identical.

The recipe is for a dozen medium rolls.

4-8 large cloves of fresh garlic. I prefer grating them but minced works well.
(avoid the store bought garlic in jars as it's got chemicals that completely change the flavor)
3 tablespoons of dried parsley
1/2 teaspoon of dried Thyme
A pinch or two of salt.
4 ounces of olive oil

Directions

Mix the spices and oil into a medium size bowl with a closable lid. Let that sit for a while.
Preheat the oven to 375.
Note: I get better results with small batches in a toaster oven.

Lay out the dough at room temperature and cut into strips 1/2" wide by 4" long.
If you use a rolling pin, try for 1/2" thick before cutting the strips.

Mandatory, use need white flour to dust the cookie sheet or baking tray, your hands and the strips of dough.
If you don't, expect a sticky mess that is totally unmanageable.

The Pillsbury dough works easily (probably from all the chemicals in it) and the pizza dough requires more effort. I'll stretch and pull the dough until it's ready to tie into a knot.

Bake for 10-12 minutes and pull out just as the tops start to brown. You want them soft and not crunchy.

While hot, dump them into the bowl, put the lid on and shake.
They are ready to eat!

If you need a quick meal for a weekday night, this Quinoa Shrimp with peas cooks up in about 15 minutes, and it's gluten-free and nutritious. Quinoa is a very filling, ancient grain from South America and is a complete protein, which means it contains all nine of the essential amino acids for good health. If you want, you can leave out the shrimp, and add a second cooked vegetable in its place. The heat from the quinoa will cook the peas almost immediately - no fuss or muss!

No Prep Quinoa Shrimp with Peas Recipe

Ingredients

½ cup quinoa
1 cup water
8 ounces cooked frozen shrimp
1 cup frozen peas
1 tablespoon coconut oil
Low-sodium soy sauce, to taste

Directions

Rinse quinoa under cold water, in a grain strainer or other fine-meshed strainer. Over medium-high heat, bring water to boil. Stir in quinoa and return to boil. Cover, reduce heat to medium-low, and cook about 12 minutes. Remove from heat when all water is absorbed. Add frozen peas immediately and stir so peas are covered completely.

While quinoa is cooking, melt coconut oil in skillet and add shrimp. Cook, stirring often, about 5 minutes until shrimp is defrosted and pink. Add shrimp and soy sauce to quinoa mixture and stir. Serve immediately. Refrigerate or freeze unused portion.

Ingredients

340 gr lean , skin on pork belly
2 tablespoons oil
1 tablespoon rock sugar
3 tablespoons shao xing wine
1 tablespoon soy sauce
1/2 tablespoon dark soy sauce
2 cups water
1 head of crushed garlic

Directions

- Cut the pork meat into chunks
- Sautê the crushed garlic with the oil
- Add the other ingredients
- Simmer until the gravy thickens
- serve it with steamed rice
