Perfect Pumpkin Tarts

Halloween and Thanksgiving aren’t the only time to show off pumpkins. Christmas is an good time to offer some pumpkin-flavored desserts as an alternative to all the other fruit-based pies. These are bite-sized tarts that are great as finger food, or a stand-alone dessert.

Perfect Pumpkin Tarts Recipe

Ingredients

Crust Ingredients:
1/3 Cup Zero Calorie Sweetener
1 Egg
1 Egg white
2 Cups Ginger Snap Crumbs

Filling Ingredients:
½ Cup Brown Sugar
¼ Cup Zero Calorie Sweetener
1 Can Pumpkin
1 Cup Skim Milk
3 Egg Whites
Cinnamon and Ginger to taste

Directions

First, preheat oven to 350 degrees Fahrenheit. Next, combine ginger snap crumbs, egg and white and sweetener in a bowl and mix well, until moist and malleable. Pour this into tart pans and press up the sides and on the bottom. Bake for 10 minutes.

As those bake, mix the egg whites, spices, pumpkin, sweetener and sugar. Pour in the milk gradually and mix until even. Pour into the crusts after they have cooled and bake for 20 minutes, or until filling is set.

Lighter Carbonara

Tasty quick meal

Ingredients

Ingredients
100g/3½oz dried tagliatelle or spaghetti
50g/1¾oz frozen peas
2 tsp extra virgin olive or sunflower oil
½ onion, finely chopped
2 smoked back bacon rashers, cut into 15mm/?in-wide strips
100g/3½oz small closed cup mushrooms, sliced
1 courgette, cut into 1-cm/½-in slices
3 tbsp single cream
15g/½oz Parmesan, finely grated
sea salt and freshly ground black pepper

Directions

Method
Half-fill a large, non-stick saucepan with water and bring to the boil. Add the pasta to the pan and cook for 10 minutes, or according to the packet instructions, until tender. Add the peas and cook for 2 minutes more.
Meanwhile, heat the oil in a large, non-stick frying pan or wok. Add the onion, bacon, mushrooms and courgette to the pan and season with salt and pepper. Fry over a medium–high heat for 5 minutes, stirring often.
Drain the pasta and peas and return to the saucepan. Add the cream and the bacon mixture to the saucepan and place over a low heat. Toss the mixture with a couple of forks for a few seconds until the cream is hot and everything is well mixed. Sprinkle with the Parmesan and serve immediately.

Notes

This pasta dish tastes rich and flavourful, but is also fairly low in calories. If you're on a diet of between 1200–1500 calories a day, you can enjoy a low-calorie breakfast and lunch as well as this carbonara for dinner.

Each serving provides 393 kcal, 18.5g protein, 43g carbohydrates (of which 5g sugars), 15g fat (of which 6.5g saturates), 6g fibre and 0.9g salt.

Directions

Melt the chocolate on the stovetop, stirring in coconut/MCT oil and butter as it begins to melt completely. Stir until smooth and add peppermint extract and sweetener. Pour into a dish of desired dimensions and refrigerate until firm.

1.5 Cups All Purpose Flour
¼ Cup Butter
¼ Cup Applesauce
4 Egg Whites
¾ Cup Sugar-Free Maple Syrup
½ Cup Zero Calorie Sweetener
2 Teaspoons Baking Powder
1.5 Cups Butterscotch Chips

Directions

First, preheat oven to 350 degrees Fahrenheit. Next, spray a 9 x 13 glass baking dish with non-stick spray. Mix together flour and baking soda in a small bowl. Mix sweetener, syrup, butter and applesauce with an electric mixer. Add egg whites, continuing to beat. Gradually add the flour, beating continuously, and then stir in the butterscotch chips. Pour batter into the pan and bake for 20-30 minutes, or until a toothpick inserted comes out clean.

-Start of by building trust and love then getting to know each other more intimately.
-Bring the heat up slowly as not to ruin the relationship but keeping the heat there to fuel the desire. I don't think you could ever spice up the relationship to much so adding spice to taste is always good
-Apply copious amounts of love remembering to feel the emotion before giving up.
-Make sure you are wiling to give as much as take in all that is needed. Keep an open mind

Thanksgiving/Christmas leftover pot pie.

Will be fixing this after every holiday. I make a lot of extra stuffing , to be sure I have enough to make this. Easy and keeps well over night in fridge or freeze to enjoy at a later date.

Ingredients

Leftover turkey/chicken
Leftover veggies and baked potatoes ,squash or whatever you have leftover from dinner
Leftover gravy
Leftover stuffing

Directions

First cut up turkey/chicken into bite size chunks
Then oil a casserole dish with olive oil , butter or whatever you have on hand
Then take the leftover stuffing and line the dish with a thin layer as a bottom "crust"
Take Turkey/chicken and toss together with the leftover veggies
Place this mix on the stuffing "crust"
Add a bit of salt and pepper and garlic (optional)
Pour the leftover gravy over the meat and veggie mix
Place more leftover stuffing for a top "crust"
Bake at 375 for 30-50 min. or till top "crust" has a bit of a crunch and browned
Serve and enjoy

Notes

So simple to make and brings all the flavors into a single dish and takes the boredom of leftover away.
Do not be scared to experiment with whatever you have leftover and you will never be sorry for making this "Your Own"
