There's a lot of dough in PIZZA...

When I commuted from Miami, I was in the car at least one hour every morning usually listening to the local Classic Rock station. The announcer is friends with the owner of a famous coal fired pizza establishment that has several stores in South Florida.
From time-to-time they would talk about pizza... ingredients, method of cooking and cost of the raw materials that went into the making of pizza. According to what they were saying, surprisingly a 16" cheese pizza had only a few dollars of materials (dough, cheese, tomato sauce) in the making and sells for around $15. Adding a few toppings could drive the price to $20.
I grew up a few blocks away from two of the best pizza parlors in Miami and a bit picky to the style of my favorite. Thin crust.
Now, I'm 40 miles north of my old location and surrounded by a few 'corporate' style Italian restaurants. For the most part, pizza here is lacking. There is one place a few miles away that does the same style as I had in Miami and for a few years did a Monday special 18" thin crust pizza for $10. Times change and after their COVID shutdown the price went up to $12. Understandable and I consider it a deal.

Looking for the perfect pizza had me experimenting with homemade pizza. All of my tries were done in a small electric toaster oven, probably less that $30.

Today, I saw an article about the best pizza ovens for home use. The cheapest was $50 and the most expensive being $1,500. I'm disappointed as the $1,500 model only does a 12" pizza!

All I can say right now is... forgettaboutit

Pumpkin seeds...

Pumpkins were marked down to $1 on Sunday so we picked a big one, sliced it into small pieces to refrigerate. Collecting the seeds and putting them in the oven to dry, I've got that for a snack tonight.
Making pumpkin bread is next on the list of baking projects this weekend.

Let's bake something tonight...

I'm in rotation to work every third Saturday but this weekend, I had a client meeting on a jobsite and our draftsman took a few personal days off so I did some my own drawings.
Getting back home during daylight hours is a plus!

More trucks in the roadway as they continued to do a repair on the water mains that haunted the community this week.

In September, I did a blog about my experiments in baking... it was a big cornbread pastry with guava and cream cheese in the middle. The ingredients were fine, it's the way I ran a heavy layer of filling that made the loaf fall apart.

Not to have another failure, I bought a cupcake tray and a package of paper liners. My energy level is up... I'm psyched into making some cornbread guava and cream cheese cupcakes, mini version this time and I'll stir up batter (and not political trouble) to improve the success of this baking experiment.

I don't want THIS to happen again:

Burnie...

My dad loved to cook. He also loved to watch TV while cooking. Unfortunately, the TV was in the living room and couldn't be viewed from the kitchen.
He would run back and forth trying to do both.
Let's say there was a chase scene on a Western that caught his attention... there would be a good chance the spaghetti would boil over or the broiled steaks would be crispy!

My first wife appropriately nicknamed him Burnie.

Fifty cent pies...

Walmart has bread, pies and pastry in the front of the store. Naturally, when you go shopping, you're most likely to buy 'things with lots of sugar' when they are displayed under your nose right from the start.

Cafeterias (like the ones in IKEA) are like that. Desserts at the front of the line.

I'm trying to hold back my intake of sugar, but 4 years ago I started with the those individual pies they sell for 50 cents each. The price hasn't change but I noticed there's much less fruit in the filling. Cherry, being my favorite and I only see 2 or 3 in a sea of red. I'm switching to apple as there appears to be more fruit and less filling in those pies.

I tried to use the character for cents, but the CS system couldn't handle it. Dollar and Euro work fine... but it makes no sense that cents is a problem.

Frozen Tofu...

I try to get to the Asian Market in Miami twice a month as they have products not found in the local markets. Tofu, for example comes in larger bricks and less expensive than anything in my neighborhood.
It was on sales and we got a few packages. If you have read my previous comments, I dislike Tofu. It has to be cooked with other foods or I will avoid it entirely.
Since we had so much, one package was stored in the freezer and when it was time to use it, thawed and drained. Also, it's a good idea to actually rinse it before cooking.
Here's what I have found. After freezing, the Tofu becomes spongy. When it's cooked with other foods, it readily absorbs the flavor of the other foods.
Sunday, it was Tofu with steak and mushrooms. If I didn't already know, I wouldn't have guessed it was Tofu and the flavor and texture changed. No more thinking Plaster of Paris was added to the recipe!

Something is fishy here...

Once or twice a month, we used to go to an Asian market in Miami. A competitor with a much larger store opened about a mile from the first one. They have better selections and we started going there. Now that I'm more than 40 miles away, with no other reason to go to Miami, we skipped those hour-long trips each way.
Today we visited another store (by the same owner) in Fort Lauderdale. It's less distance but it takes longer driving through city streets and not highway like the Miami trip. The selections are the same and this trip we got a fish that looks like something of pre-historic origin that Jacques Cousteau would have brought up from the deep ocean floor.
Nearly 3 feet long like an eel, it was coiled up in the bag.

I'll know in an hour or so if it was worth the trip!

Fake Cake...

There appears to be a culture of artists making cakes decorated to look like other foods and things...
This one comes from Sideserf Cake Studio and they also have tutorials how to make them.
