Seasoned rice



Ingredients:

4lb brown or white rice
1 1/2 pumpkin
4 stalks escallion
Pinch of salt
2 green sweet pepper
Sprigs of thyme
1/4lb ripe tomatoes
1 hot large pepper
1 cup of coconut milk
1lb broadbean (green bean)
1 large chocho
Half medium cabbage
Few stalk of calaloo
1lb of carrots
1 packet chicken noodle soup
1/4lb salt fish
3 garlics


Preparation and oooking:

1. Cut pumpkins, cabbage, calaloo, carrots, sweet pepper, hot pepper, escallion, tomatoes, garlic, saltfish and sprigs of thyme into fine pieces.
2. Add beans to boiling water, boil for 5 minutes
3. Beans almost cook, add coconut milk and other finely chopped ingredients stir and allows to boil.
4. Boils for 4 minutes max.
5. Add rice
6. Allow to cook for 20 minutes with high flames.
7. Cut heat, allow to steam for 10 minutes.
8. All water has been dried out rice is tender.
The dish is done!

On Sunday after worship food awaits me at First Unitarian Universalist Church, on Tuesday and Thursdays at LifePittsburgh and at a Subway when I have "sufficient funding" !

I saw a recent advertisement for Jim Beam bourbon
that states "There's no I in bourbon".

For some odd reason, I had to laugh.

While alphabetically correct, there can be a lot of "I" associated with drinking bourbon.
Such as;

I will have another.

Oh man, I am drunk.

I shouldn't have drank so much.

I don't feel too good.

I think I'm going to puke.

I love you, Mr. Toilet.

I see the room spinning.

I am NOT drunk osssifer.

I know it is 4 am, but I just wanted to call and see how you are doing.

I don't remember what happened last night.

Banner Days

Ever have one of those days where you're really busy and eating seems to be something you cram in on your way to somewhere else? Well, I have lots of those days, but today was exceptional. Of course, what usually happens on those days, is that I don't know what to have for dinner, either.

For some reason, I've lost my appetite completely in the morning, and don't usually eat until about lunch time. Today I was busy getting orders ready, and I was just going to head south without eating at all. Well, after crossing the bridge and realizing I hadn't gotten the postage on one of my Canadian orders, I had to turn around to get the quote and drop off the package back at home. Although most border guards are pretty good, there are two that have been after my a** because they're pissed off that I use the commercial crossing to come home. They've done all kinds of delay tactics with the gate, and now that the gate arms are left up, they've resorted to searching my car. If they were on and I had my own product in the car to mail in Canada, they'd charge me some kind of fee for bringing it back across the border. So I had to ensure there was nothing extra in my car.

While dropping off the parcel at home, so I could email the client with the postage due, I told myself to just make a quick wrap to take with me, and that if I didn't, I'd be gnawing on the steering wheel on the way home.

My orders delivered and errands run, I headed home, with still no idea of what to have for dinner. Once home and scrolling through my fb feed, a recipe for Lime Cilantro Shrimp showed up. Taking a quick look, I had almost everything except the sour cream. Okay, I could do without that.

Well, if that wasn't one of the quickest, easiest and delicious meals I've had in a long time. The shrimp was absolutely delicious and paired with avocado - YUM! Some steamed green beans to go with it, and dinner's served! Took all of about 10 minutes.

My dessert was a 'cleansing cocktail' of ginger, beet, apple and carrots - a deep red concoction which I added more ginger to, loving the flavour of it. I may have added a bit too much, as it had a definite 'bite' to it, but I really enjoyed it. (Is there such a thing as too much ginger?)

I'm always so happy with myself when I don't give in to laziness and make myself healthy meals instead of opting for a fast food option - even if the option is a salad.

So today was a banner day, forcing myself to take the time to make a lunch, and a bonus when the shrimp recipe showed up on my fb feed, and having all the ingredients on hand.

I'm hoping that next Wednesday will be another banner day, showing an additional (at least) 2 lb weight loss. I've lost 8 lbs, and want to be down 2 more when I go see the dr next week.

For whatever reason, I'm really tired tonight and, as my bed seems to be screaming my name, that's where I'm headed, despite the early hour.

Do you help those in dire need?

My house help is here today and was in a very down & quiet mood, so I asked her what is wrong, but she said nothing is wrong.
I proceeded to give her the food not needed in the house anymore, as I do every time she is here, and she effusively thanked me for it. Immediately I realised that they don't have food at their flat, where she is a single mother of two adult boys, and a little girl. I immediately asked her if they have food at home, and she said just some rolls given to her by someone else she worked at during the week.
I proceeded to give her all my extra in the cupboards in the kitchen, including coffee, tea, milk, sugar, soup, tins of all sorts, breakfast cereal, and lots else. She said it was enough for about 3 months, and thanked me. They don't eat much then, I deducted.
I did it out of the bottom of my heart, as I cannot see them going hungry, when I have so much.

Diets...

Let's face it, they are almost all nonsense, when really subjected to rigorous study, as hard as such is to do in free living human populations. Not talking here about diets for folks with various disorders. With some types of Syndromes, diabetes, celiac disease, gout, porphyria, etc., of course it makes sense to listen to a nutritionist (who, just by the way, are mostly all hot). And diets won't help our poor CS liberal friends from the struggles with severe TD-HD Syndrome. But I digress. However, those diets for loosing weight are mostly only of benefit for some scummy physician and his diet book. Or that dumb blonde anorexic TV celebrity, to expand her audience, and also promote the vapid paperback. Yet, just got back from "we beat the Indians day dinner", dinner with some family, and our twins did the cooking. All the ladies in the house are on the ketogenic diet, which for all I know, might just cause mild acidosis in some folks. But they are all looking pretty svelte, and ALL of the dishes, normally great at these get togethers anyway, were especially tasty. Sure, the extra fats advised by these plans will add some taste. But the spices were more tasty as well. Always bring a little back with me for Mr. Bravo, and he woofed it down in no time at all. I still think, if you want to loose weight, eat less and exercise more, each gradually. But maybe some diet news make sense.
