Recipe: Duck with Scottish whiskey


Buy a duck (5 lbs) for 6 people; two bottles of Scottish Whiskey, bacon, olive oil

Lard the duck and rub with salt and pepper.

Preheat the oven at 180° celcius, and fill half a glas of whisky. Drink the whisky while the oven preheats. Put the duck in an ovendish and fill a second glass of whisky. Put the duck in the oven and drink the whisky.


After 20 minutes, turn the oven to 200 degrees and vill two glazzez of wiski. Drink the glazzez and clean up the splinters of de first glaz. Pour another glaz and drinkit.

After thirty minits open de ovvento sjeck on the duk. Go to batroom to look fur oointment to put on de lefthand. Kik de ovven !

Pour two glazzez of wiski and drink up the middle glaz. Open de ovven and teek out de duk. Put oointment on right hand and pick up duk from grount. Pickit up a second time and make towwel wet to clean ointment from de duk.

Klean hands with viski. Pickup duk again and put in ovven. Open sec cond botel of viski and try to get up. Pikup tuub of hointment from grount.

Keeb zitting on de floor and put bottel of viski on de floor. Drink from de botel bicoz al de glazez aar brooken. Turn of ovven, cloos eyes and fall on grount again.

Next morning: garnish the duck with lemongrass; clean up the kitchen and the ceiling. Clean up all the broken glass and bring it together with the two empty bottles to the container. Stop at the pharmacist to get something for a headache.

National Russian dish: Crated Carrot with Garlic and Mayonnaise.

- Works as a starter, as side dish and as a main dish. Goes perfectly with sandwich, cheese, fish, sea-food, chicken, red meat, vegetarian compost, wine, beer, vodka.

You would need:
- a few carrots (size matters)
- a few teeth of garlic
- some mayonnaise (ask Noty)
? perhaps some salt.

Preparation time: 10 min max.

1. Peel and crate carrots (vitamin A, fibre).
2. Peel and destroy garlic in a garlic press (Prebiotic).
3. Blend together in a bowl, add mayonnaise (perhaps some salt).

SPANOKOPITA

1lb spinach, 1 large white or golden onion, half a bunch of parsley, 2 large lemons, 10-12 ounces feta cheese, 5-6 medium size eggs, 2 bars of butter (half pound), half a package of phyllo dough (14-16 sheets).

Sort and trim stems off spinach. Wash. Drain and put in large bowl, lightly salt. Pour over and gently toss with all the juice you can squeeze from one of the lemons. Cover and put in fridge. Finely chop the peeled onion, mince fine the fresh parsley. (Should be a huge handful when done). Dab these two ingredients with paper towels until they are just “damp”. Take spinach out, dump onto large breadboard, and chop. It doesn’t have to be fine, nor perfect. Dab same as parsley/onion. (The dish won’t work out if there is too much moisture). Add to large bowl the spinach, onion, parsley, add each egg whole, one at a time, gently mixing in until all eggs are married into greens. Add feta cheese in small crumbled amounts, again to evenly marry all ingredients. Final toss with a full teaspoon of fresh ground pepper and two tablespoons of lemon juice. (Yes, you take out moisture, then put back in moisture-kind of odd, but it works). Melt butter to pouring/brushing liquid. Use a glass 9”x 11” baking dish, oiled well with a few dabs of non-melted butter. Take phyllo leaf, place each one in one at a time, brushing generously and alternating. Four leaves overlapping is about right. Fill with spinach mix-all of it. Top with same pattern of phyllo, very generously Oiling the top leaf. You must work fast with phyllo. Keep leaves between damp (not wet) cloth towels while assembling the casserole. Bake uncovered at 350 pre-heated oven for about 50 minutes, but watch carefully. When the top is golden and glowing It is ready. Remove and let rest for 10 minutes. This is one rad dish, and one of my new cooking successes. teddybear

Hello Serene, This is my Sisters Cajun Recipe for Chicken/ Sausage Gumbo...
For Seafood Gumbo, just add seafood instead...

Note: I lived in New Orleans for about 20 years, My Sister live there for over 30 years and is one of the best cooks that I have ever known, (and not just because she is my sister) So this is an Original Cajun Recipe New Orleans Style, ( DO NOT be Fooled by Bootleg Recipes) roll eyes rolling on the floor laughing

Cajun Chicken Sausage Gumbo
Should serve about a Dozen People or ( a Weeks supply for yourself ) Lol
1 cup all purpose flour, 1/2 cup vegetable oil, or olive oil.
Add to a HEAVY Skillet ( helps prevent burning, very important)
put on low fire, steadily stirring Rue (recommends a wooden spoon)
until light or medium brown about 45 minutes
DO NOT BURN, if you burn the Rue, START OVER because it will not be pleasantmumbling

Put Rue into a Large stock pot
Add Approx. 6 quarts of water,( little at a time) while stirring to mix well.
Add 1 1/2 chopped onions, and chopped Garlic
Add good amount of Cajun Seasoning, Salt preferably but (optional)
Add any other spices that seem reasonable..(Cayenne Pepper for Hot) and File...

File is a spice usually found in Cajun Dishes...Many are unaware of File
(File is actually pronounced Fee-Lay) pointing (optional but recommended, it helps season, but also thickens up the Juices) File can usually be found in the Larger Supermarkets with the spices.

Add about 2 1/2 Lbs ( 1 Kilo) of thin sliced Smoked Sausage
About 4 Lbs..(2 Kilos) of Chicken...usually legs, thighs, wings (skinned preferably) your choice...
Add Shrimp optional...popcorn

Cover Stock pot with lid, Put stove on High until a rolling boil....
Lower to a Medium heat, and simmer Approx. 45 minutes, or until the thickest pieces of meat are done...Stirring occasionally

Cajun Gumbo is served over rice, and potato salad as a side...(Served together in a Large Bowl)
Have Larry taste test it, ( for Quality Assurance.) rolling on the floor laughing

Half the fun of cooking is improvising with what you have on hand. The only time I do recipes is if my daughters are visiting and I wish to dazzle them with my culinary expertise

Here's one that everybody loves:


6 medium (2-1/4" to 3" dia, raw)s potatoes, cut into chunks

2 tablespoons olive oil

1 teaspoon seasoned salt

1 teaspoon salt

1 teaspoon cracked black pepper



Step 1
Preheat oven to 400 degrees F (200 degrees C).

Step 2
Rinse and dry potatoes with a paper towel and transfer to a large bowl. Add olive oil, seasoned salt, salt, and black pepper; mix well. Spread potatoes on a baking sheet.

Step 3
Bake in preheated oven for 30 minutes, turning potatoes occasionally. Continue baking until potatoes are tender and golden brown, about 30 minutes more.

Hot Feta-Artichoke Appetizer


14 oz. artichoke hearts, chopped
2 (4 oz.) pkgs. crumbled feta cheese
1 c mayo
1 clove garlic, minced



Mix all ingredients together. Spoon mixture into a 9-inch pie plate or 3-cup shallow baking dish. Bake at 350° for 20-25 minutes or until lightly browned. Serve with assorted crackers, tortilla chips, or pita triangles.
Makes 2 cups.

Sometimes I make this cake for my sister for her birthday or even just because ... she loves it.



Yogurt Cake

1 c butter
2 c sugar
1/2 c yogurt
3 eggs
1 tsp lemon extract
1 1/2 tsp grated lemon rind
2 1/2 c flour, sifted
1/2 tsp baking soda


Cream butter and sugar until smooth and creamy. Add yogurt; mix well with eggs, lemon extract and lemon rind. Mix in sifted flour and baking soda a little at a time. Grease cake pan or fluted form pan and dust with flour. Bake at 375° for 30 minutes.



Syrup:

2 c sugar
2 1/2 c water
1/2 orange
1 slice lemon
1 stick cinnamon

Boil for 25 minutes and cool, then pour over the hot cake.



Sooo good with coffee or hot tea ...
