sdarlagg: I finally figured out how to hard boil eggs last year.
I have done this about ten times now, and ...Halleluia! it works perfectly EVERY TIME:
Take the eggs you want to boil out of the refrigerator and let set at room temperature for two hours, or more. (Unlike other refrigerated products, eggs keep rather well at room temperature..) Gently set the eggs in the saucepan, but don't crowd. (It is better to make several batches than to crowd, if you want lots of eggs...) Cover with cold water, about an inch above the eggs. (Eggs must be fully covered by the water..) Bring the water to a boil, adding a big handful (two tablespoons...) of salt. (The salt won't do its job if the water is cold). Watch the uncovered boiling pan for 45 seconds. Turn burner completely OFF, cover pan, and set timer for 12 minutes. While waiting for timer, fill a large bowl with cold water. Add ice cubes, about half a tray. When timer rings, take pan off burner and gently pour out the hot water, and dump (GENTLY !) the eggs in the cold bath. Wait about 5 minutes. Those eggs will peel nicely like nobody's business!! *
