The death of Mr. Chen...

When I started working in Boca Raton, my coworkers would frequent a Chinese restaurant named Hunan Palace. Through the years it must have been owned by different people but, it was a mainstay as the winter months had people standing outside waiting to get a seat.
Dingy, crowded, booths, a menu with numbers to order by. Lunch for $6 and a dollar more if you made substitutions.

COVID hit and the business suffered. As people started going back, the place was totally renovated. The huge aquarium in the middle was gone and the booths were taken out and replaced with tables. The floor was changed to ceramic tiles.
It must be hard keeping a good chef as the food was great one month and not-so-great the next. The one good thing about Chinese restaurants is they're never closed on American Holidays. Thanksgiving and Christmas were their 2 best days.

I haven't gone to eat there in more than I can remember and a friend complained to the owner about the variances in quality. That must have been happening too often and the name removed from the front of the place indicated a kiss of death.

Driving by last night, I see a banner across the old signage for a new business of buffet style Indian Cuisine. It's been a while for me to have food in Indian style, so I'll have to pay my respects to the late Mr. Chen and see new foods are being cooked in my neighborhood.

Got Milk?

Got Milk? was part of a 1993 American advertising campaign to encourage the consumption of milk. It worked as many American adults consume milk. However, many non-Americans say that only babies and young children should be drinking milk.

I drink milk. Not every day... When I do, it's usually Organic 2% or Lactose free 2% and recently a grass fed variety. In my refrigerator are other milk substitutes, Soy Milk, Almond Milk and a new favorite: Oat Milk. The drawback to the oat milk is it's high caloric content. Something like 130 calories per serving, where Soy Milk is around 30 calories.

I made 10 of these burnt cheesecake last month. Gave them to Art’s siblings when we met up for lunch. Not forgetting my neighbour and my 2 Malaysian girlfriends. I even made a sugar-free ( substitute with Stevia ) one for a diabetic patient.

This is a very easy cake to make and foolproof too! grin

I still don’t like baking and cooking….the one thing I missed about Malaysia is the accessibility and affordability of variety of food blues moping

Making something new

I didn't know what to make for dinner tonight, so I grabbed my frying pan, and went looking in my fridge. I found some diced beef, a carrot, which I sliced, and a pack of cocktail sausages. I placed all that in a pan, and then I added some salt, chili flakes and more salt, and gave that a toss. Finally, I gave it a decent amount of ketchup, and then dinner was ready.

For something I thought up on the fly, it was surprisingly good.. I just don't know what to call it, though..

Stevia and sweeteners

Though stevia is most likely as safe as artificial sweeteners (or more so), few long-term studies have been done to document its health effects in humans. A review conducted by toxicologists at UCLA, which was commissioned by nutrition advocate Center for Science in the Public Interest (Kobylewski & Eckhert, 2008), raised concerns that stevia could contribute to cancer. The authors noted that in some test tube and animal studies, stevioside (but not rebaudioside A) caused genetic mutations, chromosome damage and DNA breakage. I think maple syrup, honey are only alternatives to sugar. At the end we’ll see that better use sugar than stevia, etc...

Put the LIME in the SOUR CREAM...

Tonight was my first try making the cilantro lime salad dressing in the style of Pollo Tropical restaurant.
The sour cream was too thick an wouldn't turn in the blender, so I added more lime juice.
Oops... too much!
Some recipes call for cream cheese.
I added 2 lumps of cream cheese that helped to thicken the mixture.
It's still pour-able soft with bubbles from the blender.
I'm hoping the refrigeration solidify it and will get the bubbles out.

The flavor was okay, maybe a bit to tangy... too much lime juice.

Food poisioning....

More common than we think. In the USA, some 30K cases yearly, with up to 10% being fatal ! Well, after a lunch at a street vendor's truck this week, it hit me hard. Cholera style watery stool trips to the crapper, head ache, mild fever, tiredness and belly discomfort. These usually resolve on their own with no treatment, other than rest and not eating. Gradual progression of diet to clear liquids, and so on. But on the good side of things, I've lost almost 10 pounds, and still have little appetite. Aa-V.
