"Though it only has two ingredients, brewed coffee has even more known flavor compounds than wine. How do experienced coffee tasters figure out what's going on in a cup? They practice.
The most basic palate-sharpening exercise involves getting a grip on the five key flavors: Sweet, sour, bitter, salty and savory (a.k.a. umami). Though it might seem remedial, focusing on these properties is an eye-opening way to hone your sensory skills. Once you can reliably identify these flavors on their own, you'll be on your way to picking them out of the crowd of aromatic and flavor compounds in coffee."

How Caffeine works
"In your brain there’s something called Adenosine and it only wants to hang out with certain receptors. When these two get together, you get drowsy. When Caffeine shoes up, it attaches to the receptors so that Adenosine cannot. Our pituitary glad sees this and thinks there’s an emergency, so it tell the adrenal glands to product adrenaline. Which makes you more awake."

Lonely1: I thought they grew Blue Mountain coffee in Jamaica, but coffee in Haiti?
There are several factors that add to the quality/flavor of coffee: latitude, altitud, humidity, etc..
I have been to Haiti just for a short visit and did not get to try their coffee, I have not idea about the quality of their coffee.
Coffee in Perú and Bolivia was terrible, except for the one at the airport in Lima from Starbucks. Btw I have gotten several coupons for free drinks from Starbucks and I have taken them yet no willing to pay their very high priced beverages when there are other less expensive options, like my own coffee at home.

I heard that Blue Mountain coffee is one of the best.
