I have seen the Cocoa pods open and they look slimy and not appetizing at all but I used to bite the cocoa beans just recently being roasted and they are bitter, very bitter. My Mother used to make the chocolate with the roasted and peeled cocoa beans with not much sugar, less than most people would use.Normally it goes 1:1.5 or even 1:2 cocoa beans:sugar (too much sugar)
Regarding to the origen of chocolate, ancient people were doing wine with the pods and discharging the beans but then someone find a way to make chocolate (3,000 + years ago) In some places around here the chocolate beverage is made in just water, boiling water.
Sugar cane + coconut water I have not tried but I do like coconut water and I like the embryo that forms in some mature coconuts at their first stages.
I was given some enchiladas to take home and I will have them for lunch and they will go with some refried beans (little bit of olive oil to sauté onion and then the cooked beans).
Eating the cocoa seeds right from the big-pod is brave although I would imagine not pleasant, I never did it.
I am not familiar with the process of fermentation and the likes to prepare the cocoa beans it would be interesting to see it real and then get the cocoa beans just fresh.
For the sugar cane matter, my Father us to take us to a "molienda" where the sugar cane is processed and then they make molasses and make molds of solid molasses. We would bring some just made bread (bolillos) and then pour some hot molasses on them, that would be our treat, lovely memories.
I have tried it(many years ago) and I did like it (too sweet though) but I do not eat any of those anymore if I did it would be homemade chocolate although in a hot beverage.
The best chocolate is the one made with the natural cocoa beans although they have to undergo an special treatment until the cocoa beans are available for sale/trade.
The cocoa beans are then: -Roasted and peeled -make it to a paste adding sugar/cinnamon/almonds, etc.. -form it any shape and
