Easy fail-safe recipes
Just talking to a buddy who says he doesn't cook any more. Now, I'm not a great cook (and say so in my profile because I am So Honest) but even I have 3 or 4 fallback recipes which are easy and even better can usually be kept in their various parts in the pantry or fridge until needed.Anyone want to start the ball rolling here with suggestions to get us all drooling or at least experimenting?
Cat - there's no porcupine in my pantry, no likelihood of anything closer than a road-kill hedgehog either.

It sounds healthy. And quick. And easy. But it isn't a meal, now is it? I was hoping for suggestions I could use for guests when my social life picks up, too

Luke - oh man, you are one crazy guy. and loved the suggestion of getting hubby roped in to help. REALLY handy on a singles site.
Anything on the fish or vegetarian line? I do a blue cheese sauce for pasta which is one cup crumbled blue cheese, one cup cream, one cup mayonnaise and it is wayyyy nicer than it sounds, but leaves you with breath like a dragon. Which is fine if you are eating with someone but pity the late guest who arrives in time for coffee ... also doesn't keep well. So if cooking for one, you'd have to halve the ingredients and eat the lot. Burrrrrrrp.
AND hope the perfect partner doesn't knock at the door 10 minutes later to introduce themselves.

chicken chasseur is always a tasty quick fix meal for me.

even with me specs on i can't see what your showing me..
For quick and tasty mango chicken, simply put chicken into a casserole with lid, put a jar of mango chutney over them and off it goes into the oven for 20 mins.
Yummy
1 Cauliflower or cabbage
2 potatoes
2 fresh or bought vegetable stock cube
1 tin coconut milk or coconut cream
salt and pepper to taste
garlic plenty fresh
in a pot of water 1/2 full add all ingredients excluding the coconut cr
when the potato is soft so will the cauliflower or cabbage
use a blender to mush the ingredients
add the tin of coconut cream or milk
simmer for 10 min
serve with toast or croutons
delicious
Just back from the all-night supermarket and one of the main reasons I went was to get milk. So guess what I forgot? NOT GOING BACK. But I have finally restocked fridge and pantry and will dine sumptuously all weekend.
No sheep's head, but I did get salmon so KN's will be the first tried-and-tested, yay!
