Easy fail-safe recipes

Just talking to a buddy who says he doesn't cook any more. Now, I'm not a great cook (and say so in my profile because I am So Honest) but even I have 3 or 4 fallback recipes which are easy and even better can usually be kept in their various parts in the pantry or fridge until needed.

Anyone want to start the ball rolling here with suggestions to get us all drooling or at least experimenting?

Cat - there's no porcupine in my pantry, no likelihood of anything closer than a road-kill hedgehog either.

Cc and Crazy, thanks! NOW we're talking.

Luke - oh man, you are one crazy guy. rolling on the floor laughing and loved the suggestion of getting hubby roped in to help. REALLY handy on a singles site.

Anything on the fish or vegetarian line? I do a blue cheese sauce for pasta which is one cup crumbled blue cheese, one cup cream, one cup mayonnaise and it is wayyyy nicer than it sounds, but leaves you with breath like a dragon. Which is fine if you are eating with someone but pity the late guest who arrives in time for coffee ... also doesn't keep well. So if cooking for one, you'd have to halve the ingredients and eat the lot. Burrrrrrrp.

AND hope the perfect partner doesn't knock at the door 10 minutes later to introduce themselves.
Liz, I'm just curious as to your present profile photo. It changes to a male person every now and then, are you aware of this?
WHAT? No, absolutely not aware, I thought I was stuck in profile, haven't changed anything in days. Do a screen shot next time, would you please?

Hiya biff, wave an easy way to make tasty salmon is seasoning the fish with lemon juice, salt and pepper, wrapping it loosely in tin foil and putting it for 20 minutes in the oven.

For quick and tasty mango chicken, simply put chicken into a casserole with lid, put a jar of mango chutney over them and off it goes into the oven for 20 mins.
