Galrads, I have known of a company (this state) that exports meat to Europe, Japan and other countries and I have tasted horse meat (in the past) and that is a gourmet meat, low fat. In fact that co does not sell the meat locally.

I believe Burger King advertises that they sale 100% beef burgers. By contamination, I believe that they are saying their burgers were contaminated with over 20% horsemeat.
Only thing they do is make glue from dead horses here in Columbus, Ohio. Very stinky process.
If horsw meat is really a delicacy, my brother has buried a lot of good meat when any of his horses died. My bro and his suger-mommy in Colorado raise and show quarter horses. When they die, all he does is dig a hole with a backhoe out-back and then drags the horse over to the hole (with a tractor) and buries it. Maybe quarter horse meat is not as tasty.
For what it's worth, I like bison hip flexor (filet mignon) but it is pricey.

Perhaps, they mixed horse meat because beef was more expensive.

Had a horse steak in France and loved it. Not as tender as beef but very tasty.
