Latest mask mandate for Omaha.

Wearing a mask in public places in Omaha will be a choice and no longer a legal requirement starting midnight Tuesday. applause applause applause

I gotta admit, it does feel a bit awkward to walk into stores or restaurants without a mask on grin after 9 months of doing so.

Art and I went to have fried chicken today, 15mins drive from our house.

Nothing fancy, just raccoons ( and cats too! ) watching while we eat.

I eat too fast...

I eat too fast, but I'm not the fastest. I used to work with a guy who could put down a Burger King Whopper, large French fries and a large drink in less than 5 minutes.

I had a Dalmatian puppy who would 'wolf-down' a bowl of dog food, then run over to my other dog's bowl and get into a fight. I would feed him first then hold him back while the other dog are without being disturbed. After the dog finished and walked away, the Dalmatian would run over and lick the empty bowl!

One of my girlfriends thought she had a cure for my eating too quickly. Use chopsticks.
I wasn't good at holding them, so she opened a can of peas, put them into a bowl, then she put an empty bowl next to the full one and instructed me to take one pea at a time and transfer them to the other bowl. The trick was to develop the finesse not to crush the peas.

Got it. Chopsticks slowed me down.

The other day I was thinking about the lesson from years ago and I had a package of Blueberries... Yeah, it slowed me down, but I could pick them up so fast they were gone in 2 minutes!

Let's bake something tonight...

I'm in rotation to work every third Saturday but this weekend, I had a client meeting on a jobsite and our draftsman took a few personal days off so I did some my own drawings.
Getting back home during daylight hours is a plus!

More trucks in the roadway as they continued to do a repair on the water mains that haunted the community this week.

In September, I did a blog about my experiments in baking... it was a big cornbread pastry with guava and cream cheese in the middle. The ingredients were fine, it's the way I ran a heavy layer of filling that made the loaf fall apart.

Not to have another failure, I bought a cupcake tray and a package of paper liners. My energy level is up... I'm psyched into making some cornbread guava and cream cheese cupcakes, mini version this time and I'll stir up batter (and not political trouble) to improve the success of this baking experiment.

Ciabatta...

For a few years now my preference in baked bread and rolls has been Ciabatta. More expensive than standard bread products, I didn't have an answer of the difference... until I Googled it.
Okay, what is Ciabatta?

It's a style of bread first created in 1982 in Italy using wheat flower, water, salt, yeast and olive oil. A baker in Veneto, Italy created this recipe as a response to the French baguette that had gained popularity in the area and affecting local business.

The bread can be described as having a crisp crust with a soft porous texture and the dough has a much higher water content, cooked with a higher heat setting.

My preference are the Ciabatta rolls from Aldi, approximately 3" x 3" as it's enough for a lunch or afternoon snack when it's filled with slices of chicken and tomato. Of course I'm using sugar-free mayonnaise.

Roadside vendors...

I usually spend my weekends at the county park about 6 miles from my home. The route is a well traveled road with businesses leading out to farmland. Often, I've found people selling things on the side of the road... usually food.
On Saturday morning you can find a pickup truck in a driveway with small crates of corn harvested from a local farm. A few months ago, I bought a case. $20 for 50 ears of corn. It was the freshest corn I've had at a price much less than the grocery store. I was giving corn away as it was coming out of my ears!
Get it... the corn was coming out of my ears.

On the other side of the road is a string of warehouses and in the parking lot, a cooking trailer similar to the ones used in county fairs where a few women sell hot dogs and drinks. Next to them is a pickup truck filled with watermelon.
Both vendors have canopies to shield them from the blistering sun.

Down the road is a larger concession/catering truck with a walk-up window. It's in a clearing where cars can easily park to get food.

Last week a couple came to the county park with a small hotdog stand selling drinks, chips and hot dogs. They showed up again today and moved long the country part seeking signs of life!

Last year, coming back from a jobsite I saw a guy who had several large ice buckets and he was selling seafood. He owns a seafood shop and when they bring in too much catch, he sells it on the street... better prices than the seafood market and fresh.

I'm not sure what the local laws are for street vendors, I know in Hollywood, the rolling cafeterias are licensed. They also have their territory marked out. A Spanish woman (with 5 children) and her mother were cooking Empanadas and selling them from the trunk of their car, selling to the factories in the area, but they got flushed out by the 'roach-coach' drivers as it was taking away from their business and for sure the woman and mom were unlicensed.

Since COVID, I've been wary of buying any prepared foods from a street vendor, The corn and watermelon purchases are safe in my book. Also, they return every weekend so if I had a bad purchase, I'd have a chance they would make good on a re-selection!

Roadside vendors... gotta make a living.
