Thanks Snuggs for your letter of concern last night. I really wasn't expecting any mail from anyone from CS! Your letter, and one other from another lady, was waiting in my mailbox.
Until I opened those, I thought "hmmmm, must be a couple of scam letters!" , but much to my surprise...it was from two of the members here. This made me realize that there are people on here that do feel concern for others. It made feel feel so good, just to receive these 2 letters. Again, like I said in me reply back to your message..."I APPRECIATE YOU"!
OK, everyone....TGIF, a beautiful weekend (weather wise) is promised...maybe it will aide in the recovery tasks for rescue workers here in Alabama. Praying that the total of deaths, doesn't continue to climb. God bless all of you...again, thanks!
I think it is mostly, me getting use to a toaster-oven, compared to what I'm used to using. It seems to have so mantMANY advantages, over the big bulky conventional stove/oven.

Well, I have had some experience in restaurants as well...and I used to use a conventional oven that had the convection feature with it. It was great in making "home-made yeast rolls"! It was a lot better to cook with the convection going.
The reason for the Toaster-Oven, was because of connivence, space saving, reduce energy, by using electricity vs gas, doesn't heat up the kitchen, cost less vs regular stove, single life style (don't need to be fixing any big family dinners).
Did I leave anything out?
Anyway...I am used to fixing my cornbread with an old cast-iron skillet...and was just curious if anyone had tried it with a toaster oven. Theoretically, it should work just fine.
That sounds a lot like the Mexican cornbread I fix.....whole kernel corn, shredded cheddar, jalapeno peppers, brushed heavily on top after done, with melted butter.
