Input, eh? I'd say, go horror. Why? Small budget, easy to produce, one location, small cast...in short, all money is above-the-line, as they say, so it's easy to project, easy to budget, easy to sell. For a case study in how to make the minimum work effectively, find the dvd of "P2" from about 4 years ago. Had only 6 speaking roles. Only 3 were onscreen in more than one scene, another was only on the telephone (!) and another was the director, appearing on TV as a newscaster! But it sold, it got produced, I saw it, and it was an effective movie. Or take Night of the Living Dead: speaking cast of about 12, plus about 2 dozen extras, one location (a house scheduled to be torn down anyway), shot in 3 days...worldwide gross since 1968, maybe 700 million dollars, maybe more. Georges Franju's "Eyes Without A Face" has not been remade/adapted/copied/ripped off in some decades....I'd take a long look at adapting that premise, in the light of modern medical advances, if I were you.

As for your question here, I suggest you consult a travel agent...you know, a real one, with an office you can find listed in the phone book. Explain the dilemma, and inquire about "jaws" fares...those are roundtrip fares, with either different points of arrival and departure (like, you flew from Tampa to Madrid, but then flew back from Paris) or variable return dates (which is what you have in mind).
A reputable travel agent will be glad to find you the cheapest possible version of your itinerary.
