75g (3 oz) plain flour 2 eggs 150ml (1/4 pint) milk Method To make the batter (this can be made up to 12 hours ahead) Measure the flour into a bowl. Make a well in the centre and add the eggs Whisk with a hand whisk and gradually add the milk until combined to give a smooth batter Season with salt and pepper To make the dish Preheat the oven to 200 °C / Fan 190 °C / Gas6 Lightly grease a small roasting tin with oil around the base and sides Sit the sausages in the roasting tin and roast for about 25mins until golden brown on one side Drain off half the fat into a bowl, turn the sausages over and pour the batter around the sausages Return to the same position in the oven for about 30 minutes or until the batter is well risen, crisp and golden brown
Make sure you use a good quality pork sausage. You can cut down on the measurements according to the number of people. This would serve 4
Each to their own but I would NEVER put hot potatoes for roasting in a tin and cover with cold oil especially olive oil and why use chicken and steak seasoning on roast beef as contains paprika .
