Healthy Eating Shock

I normally try to eat healthy. It has been feeling good lately to save all my veggie matter to take to the community garden, then it dawned on me to use some of it in my own yard around veggies I'm trying to grow. Makes great compost.

Well this morning after running around doing my chores I stopped at a First Watch restaurant (noted for healthy menus) Bear in mind healthy does not mean low calorie so I have to watch that. I ordered a chia power bowl. I did not know that there was something called Chia Pudding made from chia seeds but that is what I had mixed with granola and fruit. Oh my goodness it was to die for. I came home to immediately google Chia Pudding Recipes and you can just blow me out of the water. Chia, coconut milk, vanilla, honey, soak overnight and in the morning you have Chia pudding. Many other recipes but I got so damn wet I had to come here and shout it out.

Eating Chia and flax seeds I've done for years but I didn't know Chia seeds swelled up sort of like tapioca. OMG I love it. My brother gave up sweets almost a year ago for diabetes, I will make this for him and use stevia instead of honey and he will be able to indulge without guilt or sugar. I'm so happy

And folks being happy is where it is at, I tell you.

Of course watch me make this recipe and it bombs, ha ha.

I am so happy for you Unfazed. I have been always very conscious of my own food intake and always eat organic if I can.

I thank you for the suggestion of the community garden which is very popular in the entire US now.

Health is wealth and yes our life is more meaningful with a healthy diet.

Yet obesity is very high in our country. Go figure.
I have some chia seeds but haven't had them in ages. I have used them as a binder in 'bread' made from almond flour. That pudding sounds delicious! I've never had chia pudding, or really anything much of it other than in something else. I'll have to give that a go. thumbs up

Lindsy I'm so happy the Community Garden works for you. I am still very thankful my friend from MD told me about it in a phone call. So easy to Google to get involved.

Imp - if you Google Chia pudding recipes it is mind blowing how easy it is. I can't believe I never heard of it before. The side served at First Watch was a piece of Artisan Toast with Almond Butter, what a great compliment, however I'm guessing calorie laden. Oh and the Seeds are good in smoothies too if you ever do that or they are DELISH and salads. You bake tarts or breads - probably good in that.

Chat I buy whole Flax Seeds the grind them a tad before I use them.

Bear do you remember any of the possible side effects of the Chia Seed?
I eat chia seeds every day. They are great.

I doubt there is one food you could Google that doesn't have some potential side effect.
Thank you Bear. I think Molly is right, almost everything has side effects especially if one's system is sensitive.

I'm just so shocked after years of eating my chia's I'm just now learning about this delicious pudding and way to easy to make.

Fay I've known for many years that foods have side affects and has to do with the chemicals they are grown with.
Absolutely Bear. I learned that our country allow so many chemicals in our gardening system and most of European countries are not allowing these foods to be imported because of these chemicals.

I am very picky with my vegetables. I buy a lot in summer and then freeze them for winter and it is still better than buying the non organic from the store.

Many years ago, I gave up dairy and gluten to restore and then maintain a healthy thyroid. Like many here,I also changed the food I ate. From toast with peanut butter, breakfast changed to two tbsps flax seed soaked overnight in the refrigerator and, in the morning, added two tbsps Chia seeds with warm water (let them soak a few minutes so they become gel like). Then I add fruit, coconut yogurt and whisk it with a blender and end up with a delicious and satisying smoothie in a bowl. The flax seeds consumed this way act like brushes through the intestines. Chia seeds have numerous health benefits. To healthy eating!
Bear I don't think that was a bad opinion of the guy about you.
